BREAD MAKING

(PAN DE SIOSA; ENSAYMADA; MONAY; PANDESAL; SPANISH BREAD)

INGREDIENTS

YEAST MIXTURE DRY INGREDIENTS LIQUID INGREDIENTS


½ Cup WARM WATER 7 Cup All Purpose Flour 1 CUP WARM MILK
2 tbsp instant yeast 2 Cup Sugar 1 CUP MELTED
BUTTER
1 tbsp sugar 1 tsp Salt
2 PCS EGGS

SPANISH BREAD EGG WASH


FILLING
1 EGG YOLK
1/3 CUP BROWN
¼ CUP EVAP MILK
SUGAR
½ CUP BREAD
CRUMBS
½ CUP MARGARINE

PROCEDURES:
1. Mix first the Yeast Mixture. Set aside for 10-12 minutes until the yeast activated .
2. Mix the dry ingredients: Put 2 cups of sugar and 1 tsp of salt in the All-purpose flour and
spin it for almost 5 minutes.
3. When the yeast is already activated, pour it gradually into the dry mixtures.
4. Add 1 cup of Warm milk, 2 pcs of eggs and 1 cup melted butter
5. Mix and Knead it thoroughly for 15- 20 minutes until the texture is smooth.
6. When you achieved the perfect smoothness of dough, mold it until it becomes a round
shape and put some margarine.
7. Place it in the mixing bowl and cover it with a plastic cellophane or damp cloth.
8. You will be waiting for almost 40 – 45 minutes to ley the dough rise. then punch it in the
middle to release the air
