Plasmolysis :

 The phenomenon of shrinkage of protoplast due to osmotic diffusion of water from the cells
into surrounding environment is called plasmolysis.
 This occurs when the cell is placed in a hypertonic solution.
 Water moves out , it is first lost from the cytoplasm and then from the vacuole.
 The salting of Pickles and preserving of Fish and Meat in salt are good examples of practical
applications of plasmolysis.
