Ricci di Mare

Don’t worry! No one will actually expect you to eat the spines of the Ricci di Mare. What people love most
about these spiky sea urchins is the ‘roe’ that is inside. It has a strong salty flavour and some may find it
an acquired taste. All around the coast of this country, famous for its delicious food and wine, you will
find these prickly sea creatures. You can eat it with spaghetti in a lemon sauce or even buy it preserved in
jars from delicatessens. However, the locals think it’s best to simply collect it from the rock pools at low
tide and eat it right on the beach.
