BANANA CAKE WITH OATS AND CASHEWS

INGREDIENTS:

3 Ripe Bananas, mashed up

1/2 Cup butter or 1 small stick

1/2 cup Honey

1/2 Cup Brown Sugar

1 tsp peanut butter

2 eggs

1/4 tsp Baking Soda

1 tsp Baking powder

1/3 tsp Cinnamon Powder

1/4 tsp salt

1/4 cup of Flour

1/2 cup Oats

1 cup Chopped/Crushed Cashews (can be walnuts or almonds)

METHOD:

In a large mixing bowl add the mashed bananas (overripe bananas are best), a stick of butter, the honey,
brown sugar, peanut butter, eggs, baking soda, baking powder, peanut butter, cinnamon powder and salt.
Using a whisk or paddle, mix all the ingredients together, till it's all combined.
Add the flour and oats and barely mix it to come together.

Add 3/4 cup of the chopped cashews and fold in, don’t over mix to keep it moist and crumbly. Then pour
in cake mold or loaf pan with parchment paper and top with the remaining cashews.

Preheat oven to 170 degrees Celsius or 338 degrees Fahrenheit then bake for 35-45 minutes. After
cooling, serve warm (with butter or honey if you want).
Add 3/4 cup of the chopped cashews and fold in, don’t over mix to keep it moist and crumbly. Then pour
in mold with parchment paper and top with the remaining cashews.

Preheat oven to 170 degrees Celsius or 338 degrees Fahrenheit then bake for 35-45 minutes.
