Potatoes with leather is one of the favorite dishes of Quito. The leather, during the Colony,
was considered a waste by the Spanish. Our Indians received the leather and managed to
combine it with potatoes and some other companions, thus this famous dish was born.
INGREDIENTS NEEDED
• Potatoes
• Leather
• Achiote
• Garlic
• Onion
• Salt
• Peanut
PREPARATION
A bowl is peeled approximately while we peel the potatoes, a pot is placed, the leather is
cooked, accompanied by a leg of pork, it is cooked approximately 30 minutes to 1 hour,
while the leather is cooked, a pot with water is placed to cook for the potatoes and take
them out so that it eliminates all the bacteria and by the way they are cooked when it is
finished cooking, we begin to align with the garlic, onion, salt and boil, when it has already
been cooked, liquefy the peanuts and place the peanuts in the pot with colored butter, while it
is cooking, place the already cooked potatoes so that they begin to obtain flavor and color from
all the aliens within 5 minutes and serve, accompanied by rice, egg, mote, and onion on top,
with an aromatic water or coca cola.
OUR HISTORY
Works of more than 30 years ago dedicated to Cuencan food such as potatoes with leather, lamb
broth, chicken broth, among others. The whole family involved in a single business and
accompanying the owner, the head of the family. Each of the grandchildren, nephews have
passed there as their first job.
