Gluten Free Mac and Cheese

INGREDIENTS
o 3 tablespoons unsalted butter, plus more to butter baking dish or ramekins

o ½ cup gluten free crisp puffed-rice cereal, slightly crushed

o 1-ounce parmesan, grated (¼ cup)

o 1 small yellow onion, diced small

o 2 tablespoons potato starch

o 2 cups whole milk, warmed

o ¾ pound gluten free penne, cooked until al dente drained

o Coarse salt and ground pepper

DIRECTIONS
1. Preheat oven to 350degrees.
2. Butter six 8- ounce ramekins or a 2-quart baking dish.
3. Microwave 1 tablespoon butter until melted, then toss with cereal and parmesan.
4. In a medium saucepan, melt 2 tablespoons butter over medium heat. Add onion and cook
until softened, 4 minutes.
5. Sprinkle with potatoes starch and cook 1 minute. Slowly whisk in the milk and cook, whisking
constantly, until thickened, about 3 minutes.
6. Remove from heat and stir in cheddar and mustard until smooth; season with salt and pepper.
7. Add pasta and stir to coat; transfer to ramekin or baking dish.
8. Sprinkle with cereal mixture and bake until sauce in bubbling and topping is golden, 15 to 20
minutes.
