Polenta cooked with non-dairy milk is extra creamy and goes wonderfully with
warmed berries. Extra points for keeping some simple cashew cream (below) on hand to
dollop onto this delicious breakfast.

2 cups (470ml) unsweetened dairy-free milk a simmer, adjust the heat to medium-low,

down, about 10 minutes. Lightly mash the

his very clever dish lets you serve fried bread and still call it

a salad. Health aside, this is such a beautiful, simple-is-best
salad. It uses minimal ingredients, keeping the focus on the fresh
tomatoes. Only make this salad in the summer when tomatoes are
at their best. Made right, this is the most perfect picnic salad. This
is also a great way to use up any stale bread in the house. There are
lots of versions of panzanella out there. Some people like cucumber,
some like capsicum. You can also ditch the bread and use the rest as
a sauce over pasta.

olive oil, for coating and drizzling


1 large garlic clove
150g day-old bread
800g - 1kg tomatoes (any variety)
½ red onion or 1 large shallot, thinly sliced
1 teaspoon salt
½ fennel bulb, cored and thinly sliced (optional)

DRESSING
3 tablespoons extra-virgin olive oil
1 tablespoon chopped capers
1 tablespoon balsamic vinegar
salt and pepper to taste

1 Prepare your bread first. Cut your bread into any shape you
want. Coat the base of a large frying pan with a generous amount
of olive oil. Chop up the garlic clove and add it to the oil.

2 Set the pan over a medium heat and allow the garlic to sizzle a
little. Add the bread to the pan with the oil. (If all your bread fits in
the pan at once, great. If not, work in batches.) Lightly drizzle olive
oil on the bread to coat. (We aren’t deep-frying the bread here, just
toasting it.) Toast, flipping over regularly, until golden and crispy
on all sides. Remove and leave to cool while you prep the tomatoes.

3 Chop the tomatoes and combine with chopped onion in a bowl

of the moisture out of the tomatoes. This will help the dressing
adhere.

M ost wouldn’t dream of replacing the main component of this classic French stew
with a veggie substitute, but this recipe has the same beautiful, rich mouthfeel,
but without cholesterol. Serve this up with traditional accompaniments - creamy (vegan)
mash and green beans - or fill a pie with it. A warning: no matter how much you make,
it’s virtually impossible to ‘save some for later’. Whatever brand of vegan meat
replacement you prefer/can get, use it. If vegan beef isn’t available, bulk it out with the
same quantity of mushrooms. It won’t be the same, but it will still be super yum.

80ml (ПШЗ cup) extra-virgin olive oil 1 tablespoon soy sauce

party staple in the 80s. It may seem dated, but it’s popular for a reason. Stick with
the original recipe and serve this on hot pasta or white rice. The best thing about dishes like
