Creamy Tomato Soup

Servings: 4

Ingredients:
● 2 teaspoons olive oil
● 1/2 medium onion, diced
● 1 clove garlic, minced
● 1 can (14 ounces) whole
peeled tomatoes
● 1/2 teaspoon dried basil
● 1/2 teaspoon dried oregano
● 1/2 teaspoon salt
● 1/4 teaspoon black pepper
● 1/4 cup heavy cream
● Fresh basil leaves, chopped, for garnish (optional)

Instructions:
1. Heat the olive oil in a medium pot over medium heat. Add the
onion and garlic and cook, stirring occasionally, until softened,
about 5 minutes.
2. Add the tomatoes, basil, oregano, salt, and pepper. Bring to a
simmer and cook for 10-15 minutes, until the tomatoes have
broken down and the flavors have melded.
3. Use an immersion blender or transfer the soup to a blender and
blend until smooth.
4. Return the soup to the pot and stir in the heavy cream. Heat over
low heat until warmed through.
5. Serve hot, garnished with chopped fresh basil leaves, if desired.
