Example #7 Fried rice


Ingredients Seasonings

Peasy 100 g Salt 1 tsp

Shitake mushroom 120 g Light soy sauce 1 tsp


Pinch

Green string beans 4 tael Ground pepper


(diced)

Spring onion (diced) 1 tbsp

Egg 2 units

Leftover rice 2 bowls


Steps
Step 1
Blanch the Shitake mushrooms with ginger and spring onion and squeeze dry them. Dice the mushrooms
into smaller pieces..
Step 2
Add a bit of oil and salt to the eggs. Whisk the mixture and pan-fry the eggs until half-cooked.
Step 3
Heat the wok and add ½ teaspoon of oil. Add green string beans, salt and 2 tablespoons of water. Transfer
the ingredients to a bowl and set aside.
Step 4
Pan fry the Peasy and Shitake mushrooms and set aside.
Step 5
Heat the wok with ½ teaspoon of oil. Fry the minced ginger and then stir in the leftover rice and ½
teaspoon of salt. ½ teaspoon of light soy sauce and ground pepper
Step 6
Add the ingredients from step 3, ½ teaspoon of light soy sauce and diced spring onion to the rice. Remove
from heat and serve.

Example #8 steamed tofu/Japanese tofu with minced peasy

Ingredients Marinade Sauce


Sauce

Peasy 100g Soy sauce 1 tsp Soy sauce 1 tbsp

Soft Tofu 1 big box Sugar 1 tbsp Oil 1 tbsp

Preserved olive 1.5 tbsp Corn starch 1 tsp Sugar 1 tsp


pickles

Minced garlic 1 tsp

Spring Onion As Appropriate

Steps
Step 1
Follow the instructions to prepare Peasy.
Step 2
Cut tofu into cubes and place them on a plate.
Step 3
Place preserved olive pickles and garlic onto Tofu.
Step 4
Steam over high heat for 8 minutes. Remove water vapour dripping from the plate.  
Step 5
Use a pot to heat up the sauce. Pour it onto the steamed tofu, Place Peasy onto the tofu. Drizzle spring
onion on it and it is ready to serve.

Example #9 Fried peasy with hard toufu

Hard beancurd 440g Vegan oyster 1 tsp

Steps
Step 1
Prepare Peasy in the given instructions, add marinade sauce and mix well.
Step 2
Cut off hard beancurd equally into around 12 pieces and soak off the beancurd until it is dry.
Step 3
Pat on cornstarch to one side of the beancurd, then put Peasy mixture on it.
Step 4
Heat up the oil. Place the Peasy downwards and fry until it turns golden brown.
Step 5
Flip the beancurd up and fry the beancurd side until it turns
Step 6
Remove from heat and place them on plate with some beancurd sauce. Drizzle on spring onion and ready
to serve.

Ingredients Dressing
Peasy 100g Thai chiles/ 2 or 1 Cashew/Peanut ¼ cup
serrano respectively butter
pepper, diced
Shredded red 6 to 7 cups Sea salt White miso 2 tbs
and/or green paste
cabbage
Mix of peppers: 3 each Toasted ¼ cup Lime juice 2 tbs
Anaheim peanuts,
banana peppers pepitas,
and/or sesame
seeds
Or red bell 1 each Peach, thinly 1 ripe Sesame oil 1 tsp
poblano sliced
Scallions, 2 Grated ginger 1 tsp
chopped
Chopped ½ cup Water 2-5 tbsp
cilantro (optional)
including stems
Fresh basil, ½ cup
Thai basil,
and/or mint
Instructions
Step 1
Make the dressing: In a small bowl, whisk together the cashew butter, miso paste, lime juice, sesame oil,
and ginger. Whisk in enough water to create a drizzable consistency. Set aside.

Step 2
In a dry cast-iron skillet over medium heat, char the peppers whole, rotating until the edges have a little
char, about 2 minutes per side. Remove. When cool to the touch, slice in half lengthwise, remove the
stem, ribbing, and seeds and slice horizontally into thin strips.

Step 3
Prepare Peasy in the given instruction.

Step 4
In a large bowl, combine the cabbage, peppers, scallions, cilantro, basil, chiles, and ¾ of the dressing.
Toss until combined. Add the remaining dressing, if desired, and season to taste with a few pinches of
sea salt. Serve topped with the toasted nuts, seeds, sliced peaches and Peasy.
