NARRATIVE REPORT

COCO COLA PROCESSING

Coconut (Cocos nucifera) is one of the most important crops in the Philippines it
is also known as a “Tree of Life”, it is one of the main sources of income of the farmers
since it is very abundant in the country it has a multipurpose crop that serves as food,
edible oil, refreshing drinks and etc. Hence, the Philippines lead in copra production and
Copra is one of the most export products. Coconut flesh is high in fat and can also be
dried or eaten fresh or it can be processed into coconut milk or coconut oil. The liquid of
the nut known as coconut water is also used in beverages. The meat of the coconut can
also be grated and mixed with water to make coconut milk which can be substitute as
cow milk.

Coconut wine also known as “Tuba” is one of the famous Filipino drink
especially in rural area that came from the sap of the coconut it is sweet when freshly
harvest. During our OJT (On the Job Training) in Amparitas Integrated Natural Farm
one of their famous drink and best seller drink is “Coco Cola” literally came from the
coconut sap they used the “Lambanog” or the pure sap almost colorless or milky white
in color in their Coco Cola product. The first thing that the “Mananguete” or a person
who collects the coconut sap in the coconut tree he collects the coconut sap twice a day
and transferred it in a clean container and the Tuba will release some bubbles leave it
until the bubbles subside about 3 to 4 days and when you notice a thick layer of
sediment on the bottom carefully transfer the tuba to another container then wait
another 4 to 5 days at this point the sediment will disappear and cover the container
tightly. Further, after the fermentation and distillation process, we boiled the finished
coconut sap for about half hour after that we transfer it in another container. At this
point, we, the trainees refilled the clean plastic bottles with the boiled coconut sap after
we finish the refilling, we put it in the freezer leave it until it is ready for delivery.

In the long run, during our OJT the trainees learn so much about the process of
how they made their Coco Cola Product and we appreciate more about the uses and its
health benefits such as boosting our immune system, progressed absorption, counting
weight loss and healthier heart that we can obtain from coconut, we also realize that we
should not only focus in producing copra but we should also focus that one tree of a
coconut can produce many products from its coconut leaves to its trunk. Further, we
also learn that before and after the workshop cleanliness and proper hygiene is a must
in order to prevent from any microorganisms since we are dealing in making food
products.

COCONUT BLOSSOM TEA PROCESS

Coconut (Cocos nucifera) has many uses from its coconut leaves to its trunk.
Coconut is one of the most abundant crops in the Philippines. We all have used coconut
product in our daily lives and there are so many products that are produced using
coconut such as coconut milk, coco sugar, coconut oil coconut flour and many more but
we are not aware that the “coconut flower” or also known as “coconut blossom” can also
be used as “tea”. Since Coconut flower are highly rich in nutrients such as vitamins,
minerals and amino acids it is also good source of potassium, iron, calcium,
phosphorous and a good for remedies for stomach upsets. Hence, coconut flower is a
good source of dietary fiber which is essential for good digestion, Anti-oxidants and anti-
inflammatory that helps reduce inflammation in the body, regulates blood sugar,
regulate blood pressures, boost immune system and helps reduces weight loss.

In Amparitas Integrated Natural Farm one of their products is the Coconut


Blossom Tea which is also one of their best sellers because of its health benefits that
we can get. During out OJT the in our first day of their processing are the staff taught us
on how to make their tea first thing we do is we exposed the coconut flower in the sun
for 24 hours until it is darkened. After that we started to repack the coconut blossom tea
ready for delivery.

In short, we cannot just ignore the coconut flower of the coconut since it has also
many health benefits that we get. All in all, we also learned how to make and process
one of their best seller Coconut Blossom Tea. And all the equipment, materials and
tools are always sanitized before and after using to prevent from any microorganisms
that can affect the products. To ensures that they provide the best seller and high-
quality products that can satisfy the customers and ensures the safety of the customers.

VIRGIN COCONUT OIL (VCO)

Virgin Coconut Oil (VCO) is made from fresh coconuts. It has a distinct aroma
and taste of coconuts present. It is unspoiled and unaltered coconut oil It is not been
produced from copra or commercially refined, bleached and deodorized. It is natural,
organic and no chemical or heat processing done to alter the original properties of the
product.
The staff of Amparitas taught us that the Fresh coconuts must first have their
husk and shell removed before the meat of the coconut can be "Wet Milled" and "Cold
Pushed" to extract the chemical-free coconut milk. The milk is then allowed to ferment
for a day or longer in containers. afterwards, oil is created. Thorough filtration is used to
separate the oil from the curd. We currently possess virgin coconut oil. Centrifugal force
is a more contemporary method of separating the oil from the curd.
We learned that the Virgin Coconut Oil is a nourishing oil since it is nutrient-rich
and provides the skin with the right amount of moisture. Your skin is protected by a
barrier that prevents water from escaping, keeping it moisturized and hydrated for a
long time. It also contains a lot of fatty acids which permeate the skin and restore it.
COCO SUGAR MAKING AND PROCESS

Coconut sugar is a natural sugar derived from the unopened flower bud of the
coconut tree (Cocos nucifera). It is not highly processed with no additives, bleaching
agents, or any chemicals needed to make it. In fact, the only processing that takes
place is heating the coconut sap to evaporate its water content. And Coconut sugar
contains healthy fats that are known to help prevent high cholesterol and heart disease.
Inulin is a type of dietary fiber that helps keep your gut healthy, prevent colon cancer,
and balance your blood sugar

The staff of Amparitas taught us how to make Coconut sugar so the process is
made by a two-step starting from harvesting by tapping the sap and it’s collected in
bamboo tubes. Then, continued with heating the sap will evaporate the moisture content
until it becomes a very thick and viscous mixture. From this point, it can be further
processed by reducing more moisture to become crystal. The crystal form then can be
formed as a block, granulated or even formulated to become a liquid syrup form. And
before packaging we need to storage or put in the drying oven to make sure the coco
sugar is powder in 2days. And after 2days we checked and we package and deliver in
the market.
CLEANLINESS AND SANITATION

"Cleanliness and Sanitation" Cleanliness and sanitation is not only about keeping
clean, removing dirt and dust but also about protecting the environment and its local
resources. We must reduce the harmful effect of inadequate sanitation practices in
order improve health and hygiene and promote sustainable development. First thing we
do when we enter into the facility, we make sure first that we are fully sanitize and wear
our lab gown and we used hand gloves, hairnet, facemask, and sleepers that only used
inside.

BUKO JUICE PROCESSING

Buko” is the FIlipino word for young coconut and buko juice is simply the coconut
water. This refreshing drink is incredibly popular and easy to find, with “Buko Men”
pushing their carts along the roads and walkways, cutting the tops off the coconuts and
serving the juice right from the source. In the long run, during our OJT the trainees learn
so much about the process of how they made their buko juice Product and we
appreciate more about the usesBuco Juice is made of pure coconut water, a natural
isotonic beverage that is rich in potassium and magnesium, and contains a considerable
amount of vitamin B such as thiamin, which aids in strengthening the muscles, delaying
fatigue and maintaining normal heart functions.we also realize that we should not only
focus in producing copra but we should also focus that one tree of a coconut can
produce many products from its coconut leaves to its trunk.

And staff of Amparitas taught us before we package the buko juice properly, we
make sure the water of coconut is clean that's why we need sterilize and to make sure
is good the taste and after that we make sure the sealed of cup is close and then we
storage in a cold place or in the freezer to make sure the buko juice is cold and good.
