Soft Pretzel Lab Recipe

For the dough:


● 1 C. milk, heated
● 2 ¼ tsp. Instant yeast
● 3 T. light brown sugar
● 2 ¼ cups flour, plus an additional ¼-½ cup, as needed
● 2 T. butter, diced and softened
● 1 tsp. Salt

For the bath:


● 3 cups hot water (hot from sink and then heated per the directions)
● ¼ c. baking soda

Toppings:
● 2 T. butter, melted
● 1 T. pretzel salt
● ¼ c. sugar
● 1 tsp cinnamon

1.______________________ Heat milk in liquid measuring cup for 1 minute in the


microwave. Add yeast. Stir with wooden spoon and let rest 5 minutes.

2.______________________ Stir in ½ c. flour, 3 T. brown sugar, 2 T. softened butter

3.______________________ Add 1 tsp salt and remaining 1 ¾ c. flour. Add


additional ¼-½ c. flour until dough starts to pull away from sides of bowl.

4._______ALL___________ Turn out onto lightly floured mat and gently knead
dough for 5 minutes (take turns kneading).

5.______________________ Label ziplock bag with kitchen letter and period


number. Spray inside of bag. Put dough in bag and place in refrigerator.

Pretzel Lab Day 2

1._______________________ Preheat oven to 450 degrees


2._______________________ Transfer the dough to a lightly floured mat and divide
into 6 equal pieces. Allow to rest, uncovered for 5 minutes.

3._______ALL_____________ Roll out each piece into a rope about 32-36 inches
long. Twist into pretzel shape.

4.________________________ In large measuring cup, measure 3 cups hot water


(from tap) and microwave for 1 ½ minutes.

5.________________________ Add baking soda-BE CAREFUL! CHEMICAL


REACTION! Pour into pie pan.

6.________________________ Working with one pretzel at a time, place them in pie


pan, spooning water over the tops. Drip off excess water and place pretzel on baking
sheet lined with parchment paper.
**those who want salt and butter pretzels, sprinkle pretzel salt on after you place
them on the baking sheet.**

**for cinnamon sugar pretzels, mix ¼ c. sugar with 1 tsp cinnamon and set aside
for after baking.**

7.________________________ Bake pretzels for 8-9 minutes or until golden brown.

8.________________________ Remove pretzels from the oven and brush tops of ALL
pretzels with melted butter.

9.________________________ Sprinkle cinnamon sugar on those pretzels that are


not salted.
