Typically, the term food quality
represents the sum of all
properties and attributes of a
food item that are acceptable
to the customer. These food
quality attributes include
appearance, including size,
shape, gloss, colour, and
consistency, texture, flavour,
and nutritional content.
How does food
quality happen?
The quality of food products,
in conformity with consumer
requirements, is determined
by sensory attributes, chemical
composition, physical
properties, the level of
microbiological and
toxicological contaminants,
and shelf life, and by
packaging and labeling.
Can poor
food
quality
cause food
poisoning?
Inadequate cooking is a common cause of food poisoning. Cross-
contamination from raw to cooked foods, such as from hands,
chopping boards or utensils, can also cause food poisoning. Most
foods, especially meat, poultry, fish and eggs, should be cooked
thoroughly to kill most types of food poisoning bacteria.

food and 420 000 die every year, resulting in the
loss of 33 million healthy life years (DALYs).

and medical expenses resulting from unsafe food
in low- and middle-income countries.
Children under 5 years of age carry 40% of the
foodborne disease burden, with 125 000 deaths
every year.
Foodborne diseases impede socioeconomic
development by straining health care systems
and harming national economies, tourism and
trade.
