Ethiopian Food Preparation for Self Employment Opportunities
In Ethiopia it is not new to see small fast food and restaurants here and there.
The business of selling foods is increasing rapidly in Ethiopia, mainly in Addis.
Nowadays, it is being the most beneficial job to do.

The most common fast foods that are being sold in Ethiopia are

- Chips
- Samosa
- Egg sandwich
- Donuts
- Spicy potato /Ertib/
- Baklava
- Soft cakes... etc

Also there are foods which are sold in a small cafeterias & restaurants, like

- Chicken Stew /Doro wet/


- Shiro
- Kitfo
- Tibs
- Potato with pepper & so on.

We will discuss on two foods which are called

1. Samosa
2. Doro wet

1. Samosa

- Samosa /commonly called “Sambusa” in Ethiopia/ is a fast food which is
commonly sold around schools & small villages.

The basic ingredients for samosa are

- White flour
- Water
- Yeast
- Onion
- Paprika
- Pepper
- Oil
- Table salt

The additional ingredients are

- Lentils
- Cabbage
- Rice

- Spinach
- Leek...

Preparation

1st- mix the flour & water adding some yeast and knead it until it makes a perfect
dough

2nd- wait until the dough rises while adding oil into the fryer

3rd- when it rises flatten the dough slightly & thinly

4th- after that, prepare another pan & put it on the stove to get heat

5th- put the dough on the pan to get small amount of heat

6th- after that, shape the dough triangularly and fill it with one of the additional
ingredients

7th- and then, add it into the hot oil to be fried.

How to change this food preparation into profitable?

- Getting a rent in which many people’s pass by also with good utilities
- Advertise your fast food by papers
- Doing your works with neat devices
- Also being neat & clear while working
- Making samosas with large quantities
- Making samosas with good qualities
- New versions making like, adding some spices

2. Doro wet /Chicken Stew/

- It is Ethiopians icon food. It takes a longer time to do, also to finish eating. Doro
wet is commonly cooked on holidays, festivals, weddings, funerals, also when
guests came & so on. It is rare to see people doing also eating Doro wet on normal
days.

Basic Ingredients

- Chicken
- Berbere
- Boiled egg

- Onion
- Butter
- Aframomum Corrorima /korerima/
- Table salt
- Food oil
- Lemon /to wash the chicken meat/
- Garlic & Tomato paste /not basic/
- Oil

Preparation- has difference from one to another

1st- mixing & cooking the onion with oil, after that, add berbere / all in large
amount/

2nd- add water, salt & another useful spices

3rd- wait until the stew to be perfect

4th- add the chicken

5th- add the ting that you doesn’t add yet /like butter/

6th- wait until the chicken meet to be highly cooked

7th- after that add the boiled egg

How to change this food preparation into profitable?

Doro wet is a hard business because it

- Takes a long time to be cooked


- Also need Injera

- Costs too much /so if you get one time loss it will be hard/
- Many people only eat on holidays & festivals

So the solution is

- Introducing a new version of Doro wet which can be eaten on normal days
- Providing take away
- Amaze peoples by neatness & sweetness of your food
- Starting your Chicken farm so that you won’t cost much
- Also providing good Injera
- Cooking also another foods to boost you foods
- Selling foods with fair price
