SPICY SPROUT SALAD DRESSING

This can be used as a salad dressing, dip, or soup base. Radish sprouts taste just like radishes,
and the sprouts are

more nutritious. To create a dip using these ingredients, use less water and more avocado.
Substitutes for the

avocado include cashews, pine nuts, or macadamia nuts.

INGREDIENTS | SERVES 4

¼ cup radish sprouts

¼ cup alfalfa sprouts

1 tablespoon lemon juice

¼ cup avocado

½ cup red bell pepper

½ cup tomato

2–4 tablespoons water, as needed

Place all the ingredients into a blender and blend together until smooth. Pour over your favorite
salad.

Preparing Sprouts

To prepare these sprouts, soak 3 table-spoons alfalfa seeds and radish seeds for 8 to 12 hours.
Drain and rinse. Then

transfer the seeds to a sprouter. Sprout for 5 days, and rinse the seeds two or three times a day.
Rinse the sprouts to

remove the hard hulls and they are ready to use.
