NOTE:
1. Total number of persons (19 persons) indicated in the whole kitchen area is presumed to be the same person(s) who will work in each area in the kitchen.
2. Extract air for Pantry, Toilets, Ablution, Locker and Shower calculated based on 100% supply air derived from Carrier HAP software.
3. Extract air for Dishwashing, Bakery and Main Kitchen area shall be 10% of the exhaust air passing thru the canopy hood.
4. Extract air for Meat preparation, Poultry preparation and Fish preparation shall be calculated based on 10 air changes per hour.
