Almost Flourless Chocolate Cake

16 ounces semi-sweet chocolate chips


1/4 cup butter or margarine
3 eggs
1/2 cup granulated sugar
1/2 cup all-purpose flour
2 teaspoons vanilla
1 cup whipping cream
3 tablespoons powdered sugar
1 tablespoon unsweetened cocoa
Strawberries, for garnish, optional
Mint leaves, for garnish, optional
In a medium saucepan over very low heat,
melt chocolate chips with the butter. Add
eggs to chocolate mixture, mixing well.
Stir in sugar, flour and vanilla. Pour batter
into a greased 9 inch pie dish. Bake at 350
degrees for 25 minutes. Let cool
completely on a wire rack. Beat cream
until soft peaks form. Add powdered sugar
and cocoa. Whip until thick. Spread over
cooled cake. Serve immediately, cut into
squares. For a lighter version, dust with
powdered sugar and garnish with
strawberries and mint leaves, if used.
Microwave Directions:
Place chocolate chips and butter in a
large microsafe bowl. Microwave for 1
minute on high, uncovered. Stir well. Add
eggs to chocolate mixture, stirring well to
combine. Blend in sugar, flour and vanilla.
Pour mixture into a well buttered
microsafe 9 inch pie plate. Add chopped
nuts, if desired. Microwave on high for 6
minutes. Let cool on a wire rack. Beat
cream until soft peaks form. Add
powdered sugar and cocoa. Whip until
thick. Spread over cooled cake. Serve
immediately.
