8/4/23: Cooked chicken in walk-in cooler at 51F. It was determined that chicken was in cooling
process and meeting cooling parameters for time and temperature. Buffalo dip was 50 F, but had
just been made per PIC. Cole slaw was being held in walk-in cooler and was 40 F. Cut lettuce was
in bin on counter with ice only in contact with bottom of pan. PIC stated lettuce had been recently
cut. Lettuce was moved to walk-in cooler to facilitate proper cooling. Options were discussed with
PIC regarding temperature or time control for the lettuce. C.Edge
