Trainee Instructions

Performance: Students will prepare and bake a pound cake and icing IAW the EC checklist and
D2, p 121-122, p 138.  Candidates will not be required to ice the pound cake for this assessment

Purpose: During this EC candidates will be assessed on their ability to prepare and bake cake and
icings while maintaining food safety standards.  During this EC students will prepare and bake a
pound cake and buttercream icing. The scope for this assessment is EO 006.01, and it will be
assessed upon completion of EO 006.01 teaching point 9.  This is a formative assessment.

Test conduct: You will be provided with a SQC workstation, food supplies, recipes and the
student aide memoire.  You will have 200 minutes (4 x 50 periods) to follow the recipe to
prepare and bake a pound cake IAW D2, C1 chap 11 pages 282-309, and A3.  You will be
required to maintain the standard of safety throughout the EC.  You will be provided with the EC
checklist that outlines the criteria for preparing and baking the pound cake, as well as
maintaining hygiene and sanitation.  The test administrator can stop the EC at any point if issues
of safety arise, or if they deem the standards for hygiene or sanitation to be unsafe. 

Time: You will have 4 x 50 minute periods to perform this EC. This does not include time for
clean-up.

Resources: Candidates will be provided a small quantity cooking (SQC) workstation with
required food supplies, recipes and the student aide memoire. They will also be provided a copy
of the EC checklist. 

Standard of achievement: To successfully complete the EC, candidates must achieve 18/21 SATs
overall, as well SAT on the 2 critical items. 

Upon completion: After completion of the assessment, please indicate you have finished to the
administrator and wait for further direction.  Clean up will occur once all candidates have
completed the EC to avoid distraction.

Feedback: Feedback will be provided to candidates by the asesor through the EC checklist within
24 hours of completion of the EC. 

Failure: Failure will result in an automatic re-test.  Feedback and assistance will be provided by
the assessor to identify problem areas. Only 1 re-test is permitted for this part of EC 006.01. 
Upon failure of the EC, the candidate will receive counselling from the course director, and if
they pass the re-test, will continue with training. If they fail the re-test, they will be counselled by
the I/C Cook Training and continue on with training.
