Miss T’s Creamy Italian Wedding Soup

Ingredients for the Chicken

4 boneless skinless chicken breasts


1 cup butter
1 bunch Italian parsley, minced
3 bay leaves
3 cups finely chopped celery
2 medium white onions, finely chopped
2 bunches of green onions, finely chopped (entire green onion)
2 tablespoons oregano
2 teaspoon ground white pepper

Soup

2 cups water
2 cans chicken broth
3 cups half & half
2 cups orzo pasta

Salt to taste

Instructions

1. Cut the chicken into either bite size pieces or smaller and saute in ¾ cup of butter

2. Sauté parsley, bay leaves, celery, white onions, oregano, white pepper and green
onions in ¼ cup of butter until tender.

3. Combine chicken and vegetables in large stockpot.

4. Add water, broth, half & half and pasta.

5. Simmer until the pasta is tender and salt to taste
