"QUINOA CHAUFFA"

Ingredients:

• 1 cup quinoa • 2 eggs, lightly beaten


• 2 cups water • 2 tablespoons soy sauce
• 2 tablespoons vegetable oil • 1/2 teaspoon ground cumin
• 1 small onion, finely chopped • 1/2 teaspoon paprika
• 1 garlic clove, minced • Salt and pepper to taste
• 1 red bell pepper, diced • Chopped green onions for garnish
• 1 cup frozen peas and carrots mix

Instructions:
Rinse and Cook Quinoa:
Rinse the quinoa thoroughly under cold running water.
In a medium saucepan, bring 2 cups of water to a boil.
Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until all the water
is absorbed and the quinoa is cooked.
Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
Prepare the Ingredients:
While the quinoa is cooking, prepare the vegetables and other ingredients.
Dice the onion, mince the garlic, and chop the red bell pepper.
If using frozen peas and carrots, thaw them.
Stir-Fry:
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the diced onion and minced garlic. Stir-fry for a minute or until they become fragrant.
Add Vegetables:
Add the diced red bell pepper and the thawed frozen peas and carrots to the skillet. Stir-fry for another 3-4
minutes until the vegetables are tender.
Scramble Eggs:
Push the vegetables to one side of the skillet, creating a clear space.
Pour the beaten eggs into the clear space and scramble them until they are fully cooked.
Combine Ingredients:
Mix the scrambled eggs with the cooked vegetables in the skillet.
Add Quinoa:
Add the cooked quinoa to the skillet, mixing it with the egg and vegetable mixture.
Season:
Drizzle soy sauce over the quinoa mixture.
Sprinkle ground cumin and paprika over the ingredients.
Season with salt and pepper to taste.
Stir-Fry and Serve:
Stir-fry everything together for a few more minutes until everything is well combined and heated through.
Garnish and Serve:
Garnish with chopped green onions.
Serve your Quinoa Chaufa hot as a delicious and nutritious meal.
