Plain cake

● ¾ cup (1 ½ sticks) unsalted butter, softened


● 3 large eggs, room temperature
● 2 ½ cups all-purpose flour
● 2 ½ teaspoons baking powder
● ½ tsp salt
● 1 ¾ cups sugar
● 1 ½ teaspoons vanilla
● 1 ¼ cups milk, room temperature
● Fruits

Method

1. Preheat the oven to 350 F and grease and flour two 8” round pans.
2. In a medium size bowl stir the flour, baking powder and salt together, and set aside.
3. In your mixing bowl, beat butter and sugar until light and fluffy, then scrape the
bowl.
4. Add eggs, one at a time and beat after each addition until incorporated.
5. Beat in vanilla.
6. Alternately add flour mixture and milk to butter mixture, beating on low speed after
each addition until just combined.
7. Spread batter into the prepared pans and bake for 30-35 minutes.
8. Start checking at 25 minutes, a toothpick inserted into the centre of the cake should
come out clean.
9. Cool cakes in the pans for 10 minutes, then run a knife along the sides of the pans
and turn out onto the cake board.
10. Decorate with fruits.
Rock Buns

● 3 cups counter flour


● 1 packet Coconut Milk Powder
● 1 tablespoon(s) baking powder
● 1 1/2 teaspoon(s) nutmeg
● 1/2 cup(s) Butter
● 1 cup(s) dark sugar
● 1/4 cup(s) raisins, soaked
● 1 large egg, beaten
● 4 ounce(s) water or milk
● 1 teaspoon(s) vanilla
● 4 whole maraschino cherries

Method

1. Combine flour, coconut milk powder, baking powder and nutmeg and mix for even
distribution.
2. Add butter and use a dough blender or your finger tips to gently rub the margarine
into dry mixture until it resembles fine breadcrumbs.
3. Mix in the dark sugar and soaked raisins using a wooden spoon.
4. Combine beaten egg, water or milk and vanilla; make a well in the center and pour in
the liquid.
5. Combine the mixture using two forks. Do not over mix!
6. Drop rock buns by spoonfuls onto a greased baking tray and bake at 180°C/350°F for
26 minutes. Remove from the oven and cool on a cooling rack.
7. Rinse the maraschino cherries and cut each into 4 pieces. Use one piece of cherry to
decorate each rock bun by gently pressing it in the center.
