Individual Quiches

These delightful little morsels are essentially made from 4 key components, that you can adjust and
vary to your liking.

• Base Mixture
• Protein
• Egg Mixture
• Pastry

• Optional Extras

Base Mixture

• 2 Onions
• 8-10 Mushrooms
• 1 – 1 ½ Cups of Frozen Corn
• 3 Cups Spinach
• 4-6 cloves of garlic

Dice and fry onion until they’re just starting to soften

Add diced mushrooms and a good pinch of salt

Fry until both are well softened

Add frozen corn and cook until defrosted

Add spinach and a good pinch of salt and cook until wilted and well combined

Add crushed garlic and fry until raw garlic edge is gone

Add pepper if desired

Place in a bowl and set aside

With this mixture you can really use whatever ingredients you like, grated zucchini, peas etc..

You’re looking for a nice, roughly even ratioed, well-seasoned, tasty vegie mixture. This recipe
makes quite a bit, as it keeps very well in the fridge, and we use it for many other applications.

Protein

Good options for tasty quiches include

• Diced, fried bacon


• Tinned salmon flaked
• Smoked salmon
• Marinated, fried, diced tofu
Egg Mixture

10 Eggs

Approx ½ Cup Milk

Salt and Pepper

Dried Mixed Herbs

Combine eggs and milk and mix well

Add salt, pepper and dried mixed herbs

Pastry

For this recipe I generally use sheets of puff pastry.

Depending on what size muffin tins I’m using will determine on what size I cut the sheets into.

• Large Muffin tins 4 squares per sheet


• Standard Muffin tins 9 squares per sheet
• Mini Muffin tins 12 squares per sheet

Once defrosted, cut the pastry into the appropriate sizes and line each hole of a well-greased muffin
tray with a square of pastry.

If using GF pastry, you’ll need to fold into 3 and re-roll the sheets, I find this easiest done in the
individual squares.

Optional Extras

Really anything else that you like, and not necessary, but some options include;

• Sliced tomato
• Fresh herbs
• Grated carrot
Putting it all Together

Preheat oven to 180oC

Take your pastry lined muffin trays

Spoon in a small amount of the base mixture, to take up around 1/3, ½ of the depth of the muffin
cup

Top with protein of choice

Add any extras

Spoon in the egg mixture until each cup is ¾ full to full, depending on your preference.

Once complete, roughly fold any extra pastry over the top

Place in the oven and cook until brown.
