Sensory evaluation test questions for duo-trio test

Provided there are 2 different products A and B, differentiate 2 products by using a duo-trio test

Step 1: Remove all labelling of product A and B, prepare an extraction cup and mouthwash (filtered
water) after each taste.

Step 2: Split 1 sample into 2 identical parts (example: product A1 and A2) and decide a sample to be a
standard sample (example: A1)

Step 3: Code all 3 samples (example: A1: 124; A2: 468; B: 980). The code must not follow any rules or
preference to ensure that the test subjects will have no bias. The test subject will be informed that only 1
sample is that standard (example: sample 124)

Step 4: Put all 3 samples 124, 468 and 980 to 3 separate testing platforms (cups or dishes) and let the
test subject examine the 3 products

Step 5: Depend on what qualities are needed to differentiate the 3 products, ask the following questions

Assess the smell/taste/aroma of 3 different types of <test materials> provided and highlight the code
that is similar to the standard (red)

These tests attempt to determine which product is favored or how much the product is enjoyed.

Affective tests have two categories, depending on the main task of the test: acceptance or preference.
The primary task of an acceptance test is “rating,” whereas the primary task of a preference task is
“choice.

In this study, we will use preference test

The question of interest for the preference test is, “Which sample do you prefer?”

• Situation: we wants to know determine which brand of soft drink people should use. We want to
compare the preferences for two prospective products.

• Test objective: The test objective is to determine which soft drink product is preferred over the other
product.

• Test design: Two products (A and B) coded with three-digit random numbers are presented
simultaneously at the same temperature. Half the participants receive the soft drinks in the order A–B,
and the other half receive them in the order of B–A. The serving temperature and serving time after
opening the containers are carefully controlled. (Both are particularly important variables to control for
carbonated beverages.)

• Score sheet: Taste the sample on the left first and the sample on the right second. Which one do you
prefer? Please choose one.
