Thc tp tt nghip l t thc tp quan trng v n gip cho sinh vin bc u lm quen vi vic sn xut, p dng nhng kin thc c hc trong nh trng vo iu kin sn xut thc t. Qua so snh nhng kin thc c hc trn l thuyt so vi thc t c nhng im no ging v khc nhau. Tp on VBL Vit Nam l mt hnh thc lin doanh vi nc ngoi in hnh, pht trin ln mnh vi 4 c s t ti thnh ph H Ch Minh, Tin Giang, Qung Nam v Nng. 2.2.Thuyt minh quy trnh cng ngh: Nguyn liu sn xut bia gm malt v go. Nguyn liu chnh l malt c nhp t c v, ngoi ra cn s dng nguyn liu thay th l go nhm gim gi thnh sn phm. Sau khi nghin, bt go c phi trn vi nc theo t l 1: 3 ri bm sang ni nu go, ni go c nu trc khong 25 pht v bm trc vo ni go 3% malt lt y ni chng chy ni. Sau khi phi trn go xong cn phi v sinh ng ng trc khi phi trn malt trnh h hng m nu do ng ng dn go v malt phi trn n ni nu l dng mt ng ng. Phi trn go xong, b sung enzim Termamyl, nng nhit ni nu go t 1000C v gi trong 2 pht. Malt oc phi trn sau khi ni go nu c khong 10 15 pht, malt c phi vi nc theo t l 1: 4, sau phi trn c b sung thm enzim Cermamix ri nng nhit nhit ni malt t 400C mt thi gian khong 30 pht cho qu trnh m ho xy ra do nhit ny enzim proteaza hot ng, ri bt u hi cho. Dch khi cho t ni go c bm sang ni malt, tin hnh qun trit hi cho 660C v gi trong 12 pht ri nng nhit mt cch t t qu trnh ng ho xy ra to ng maltoza v mt t dextrin, nng n khi t 78C th gi 1 pht. gi nhit 140C. Khong thi gian ta kim tra ng, nu ng cn 4,2 4,8 th ta nng nhit ln 150C gi 150C trong 2 ngy nm men hot ng mnh nhm s dng lng ng cn li. Sau 2 ngy gi nhit ny th bt u tnh thi gian Ruh, Ruh khong 2 ngy th ta kim tra hiu s AE FA (FA: ng khng ln men), nu hiu s ny khong 0,3 0,5 th ta bt u rt men di y ra (v lc ny men n ht ng). Thi gian rt men trong khong 24-48 gi men lng ht xung v trong khong thi gian ny men khng cht. Rt men c thi gian ta kim tra hm lng diacetyl, nu < 0,12ppm th ta h xung 14 0C v tip tc h lnh mt cch t t xung n -10C (thi gian khong 2 ngy), h n khi nhit t -10C th tng tr trong khong 2 ngy. Sau khi ln men, bia c b sung CO2 bo ho trong nc ri c bm qua thit b lc a nhm lm trong bia, bia trong sau lc c n nh trong tank BBT. Sau , bia c chit rt vo chai theo nguyn tc rt ng p. Tip tc ng np, thanh trng, dn nhn, in ngy sn xut, hn s dng ri c chuyn vo kho.

CHNG 3:NGUYN LIU SN XUT


3.1 Malt: Malt l ht ho tho ny mm trong iu kin nhit v m nhn to xc nh, to malt bng cch cho ht i mch ny mm trong iu kin nhn to v sau tch b r mm v sy n m nht nh. V mt dinh dng, malt rt c gi tr v hu nh tt c cc thnh phn trong ht ng cc c chuyn v dng d tiu ho. Trong sn xut bia, malt va l nguyn liu chnh, va l ngun enzim thu phn hay l tc nhn ng ho. Trong malt i mch cha nhiu cht dinh dng c bit l tinh bt, hm lng protein thch hp cho sn xut bia. Ngoi ra trong malt i mch cn cha nhiu enzym c bit l proteaza v amylaza cung cp cho qu trnh thu phn. Trong sn xut bia ch yu dng malt i mch v:

nc dng trc tip nu bia khng nhiu nhng n nh hng nhiu n cht lng ca sn phm. Nc trong sn xut bia cn phi p ng c cc yu cu cng ngh. 3.4.Hoa houblon: Hoa houblon l nguyn liu c bn th hai trong sn xut bia. Vai tr ca hoa houblon trong sn xut bia: +To v v mi cho bia. +Gp phn gi bt cho bia. +Tng tnh st trng cho bia. +n nh thnh phn ca bia. Thnh phn ho hc ca hoa houblon gm c: 11- 13% nc, 15- 21% cht ng, polyphenol 2,5- 6%, protin 0,3- 3%, v cc cht khc 26- 28%. nh my s dng cao hoa v hoa vin. 3.5.Nm men: Chng nm men nh my s dng l chng nm men chm. Thnh phn ho hc ca t bo cha khong 75% nc, protin 15- 45%, cacbonhirat 25- 35%, cht bo 4- 7%, cht v c 8- 9%.

Trong qu trnh nghin, cn thng xuyn kim tra cht lng ca bt nghin v lng nguyn liu a vo. Thc hin: V c s dng nguyn liu thay th vi t l go: malt = 1:1 nn s dng phng php ng ha kt hp. S dng phng php un si x l nguyn liu thay th l go, v dng phng php ngm i vi malt sau tin hnh hi cho trong ni malt. Trong ni go: S dng phng php un si. Trc khi nu b sung CaCl2.H2O vi hm lng l 1560g\ m nu nhm to pH m cho qu trnh thy phn, sau b sung enzym Termanyl vi lng 790ml phn ct tinh bt thnh cc mch ngn, to iu kin thun li cho qu trnh ng ha. Ngoi ra, cung cp h enzym amylase cho qu trnh thy phn tinh bt trong go ngi ta c b sung 10% malt lt so vi khi lng go trong mt m nu trong cng on phi trn nguyn liu. Tin hnh nng nhit ca ni go ln 600C v gi trong 5 pht tinh bt ht nc trng n. Trong sn xut tnh ton sao cho khi thi gian nu ni malt va kt thc th ng thi ni go cng va thc hin xong qu trnh h ha nhm trnh thi gian i qu lu mt trong 2 ni dn n s oxy ha, lm thay i thnh phn ha hc ca nguyn liu v ko di thi gian sn xut. 5.2 Thuyt minh s qui trnh cng ngh ln men v lc. Dch nha t nh nu sau khi houblon ho, lng trong c bm qua phn xng ln men v lc vo my h lnh nhanh. Ti y dch nha c lm lnh nhanh t 90-950C xung 8,50C nh tc nhn lnh l nc lnh 20C cp t phn xng c in. Nm men ging c hot ha v nui trong phng th nghim. Trong khi nui ngi ta dng mi trng l dch nha v trng sau khi lc, c b sung thm mui khong, cht kch thch sinh trng nh biotin, cc vitamin khc Nm men c nui n khi t s lng yu cu s c chuyn n tank nhn men trong phn xng lc. Trong qu trnh nui, cp khng kh v trng lin tc to iu kin thun li cho qu trnh sinh trng v pht trin ca nm men. Sau mn men c cp vo tank ln men ngay sau khi a dch nha lnh m u tin vo. CO2 sch sau khi thu hi c ha lng, khi cn cp cho b phn sn xut th tin hnh ha hi. Thi gian kim tra tinh khit CO2 khong 24 gi sau khi lm y tank. Trong qu trnh ln men, cc cn b hoa houblon cn st li trong dch nha s c xu hng lng xung y tank. V vy sau thi gian 6 gi k t khi dch y tank ln men th tin hnh x cn y. Gi nhit ln men l 140C trong khong 4 ngy k t khi lm y tank n khi kim tra thy nng ng ca dch ln men t 4,24,80P th tin hnh nng nhit ln men ln 150C kch thch qu trnh ln men mnh hn. Sau gi tank nhit ny trong 48 gi v kim tra nng dich ln men. Nu chnh lch gia ng ln men c (AE) vi ng gii hn (FE) khng vt qu khong 0,3 0,5 th bt u tnh thi gian Rhu. Thi gian Rhu di hay ngn tu thuc vo hm lng iacetyl trong dch ln men. y l mt ch tiu quan trng khi nh gi cht lng ca bia. Khi hm lng iacetyl t khong 0,12 ppm th kt thc qu trnh Rhu. 6.3. Thuyt minh dy chuyn phn xng chit rt: V chai bn c bng ti chuyn vo my bc v chai. Ti y chai bia s dng s c bc ra khi kt v chuyn vo my ra chai nh bng ti nm ngang. H thng chit bia l mt my lin hp gia chit v ng np nn chai bia sau khi c chit s chuyn ngay n b phn ghp np. Trong qu trnh di chuyn ny ta tin hnh phun nc nng 85 1000C vi p lc ln (6 bar) ui ht phn khng kh cn li trong c chai. Yu cu ca chai bia sau khi ghp np l mi ghp phi kn m bo cht lng bia. Sau khi ghp np bia c chuyn n thit b thanh trng nh bng ti dit men, n nh cht lng. Qu trnh thanh trng din ra 680C v ko di 55 pht. Trc khi ra khi thit b thanh trng chai bia c thi sch nc bm trn v chai thun li cho cng on dn nhn tip theo. Sau khi thanh trng 1 s chai bia c th cn cn hoc th tch khng t yu cu, cn kim tra v loi b ngay.
