European and asiatic strains of Lentinula edodes submitted to production

with Brazilian axenic substrate

INTRODUCTION

The national interest to commercial cultivation of shiitake is raising due to its nutritional and medicinal properties, and also

because of its flavor. The mushroom cultivation in Brazil is done on axenic substrate formulated with sawdust bran and calcium

carbonate. The aim of this research was to evaluate the yield and the protein content of mushrooms cultivated with Brazilian

substrate submitted to the production with European (FF061) and Asiatic strains (FF055, FF002, FF196 and FF036).

DISCUSSION

The FF061 lineage had 32% of yield conversion, becoming
