1 1/2 tbsp.

of canola oil
6 corn tortillas (6-inches)
1/2 tsp. sea salt

For Salad:

4 diced tomatoes
1 diced bell pepper, any color
1 head lettuce
1/2 diced red onion
1 diced zucchini
1 1/2 cups corn
1/2 diced jicama
1 1/2 cups of black beans
1 1/2 cups corn
1/2 cup cilantro, finely chopped

Instructions

1. To prepare the dressing, mix lime juice, cumin, honey, salt, and
garlic.
2. Gradually pour the oils while stirring it continuously.
3. Season to taste and put more pepper and salt, if required. Then set it
aside.
4. Preheat the oven to 400 degrees F to get it ready for preparing tortilla
strips.
5. Put tortillas on the cutting board, and cut them half.
6. Transfer the tortilla strips to a pan, then drizzle them with oil.
7. Add salt, then bake for around 15-20 minutes, while stirring it
continuously until it is golden brown. Set aside.
8. To prepare the salad, put corn in the oven, the cook for almost 3
minutes.
9. Cut out the bottom of the corn, then pull back silks and husks and
silks.
10. Cut corn kernels from the husks. Set them aside.
11. Mix other ingredients and corn in a bowl. Mix to combine.
12. Pour dressing and stir well.
13. Add cilantro leaves for garnishing.
14. Serve with the tortilla strips on the top.

8.6 Mexican Salad with Lime Dressing

Ingredients

For Salad:

1 cup tomatoes, halved


1 large head lettuce, chopped
1 diced avocado
1/2 yellow onion, sliced
1/2 sliced cucumber
l cup peas, whole
1/3 bunch of fresh cilantro
1/2 cup of corn kernels, freshly cooked or canned

For Lime Dressing:

1/3 cup of lime juice


1/3 cup of olive oil
Tabasco sauce, to taste
1/8 tsp. of black pepper
1/2 tsp. of sea salt

Instructions

1. Mix all ingredients for salad dressing and whisk together.


2. Chop all ingredients of the salad and mix it in a salad bowl.
3. Make sure to shake the dressing before serving.
4. Drizzle as much dressing on the salad as you like, and enjoy!

8.7 Spicy Mexican Salad


Ingredients

1 1/2 cups of shredded Monterey and Cheddar cheese


1 package of chopped lettuce
1 can of pinto beans
2 tomatoes, chopped
1 can of black beans
1 bag of corn chips
1 bottle of salad dressing

Instructions

1. Take a bowl, and combine cheese, romaine, pinto beans, tomatoes,


and black beans.
2. Add corn chips and dressing, toss it well, and serve.

8.8 Mexican Avocado and Shrimp Salad

Ingredients

1 1/3 tbsp. olive oil


3/4 pound of shrimp
2 tbsp. of lime juice
Salt, to taste
Pepper, to taste
1/2 tsp. of honey
1 tsp.of chili powder
1/2 cup of corn kernels
1/2 cup of black beans, cooked
1 cup tomato, diced
1/2 thinly sliced avocado
1/3 cup cilantro, chopped
4 cups of mixed greens
