One tool that has proven to be particularly useful in this regard is Signal.
Signal is a secure messaging app that offers end-to-end encryption, meaning

conversations remain confidential and cannot be intercepted by third parties.

Applications that require accounts
If one of the applications that you need to use requires you to set up an
account, it is suggested that you use a sock puppet or and under cover
account.
