In the Falls when all the leaves become yellow-red, people come together in friendship enjoying some cups of lotus tea and thats when we all have Hanoi speciality, Vong villages Green rice flake cake call Cm. In the North, Cm is made from young rice grains, especially Hoa Vang rice grains. In fact, Cm is the young Hoa Vang rice grain. Early of the Fall, around the countryside, the sense of rice field, the grass and the mother-land are full of the atmosphere. Vong villagers gather young grains and in 24 hours they must make them become Cm. Its not easy to make Cm. The grains ,after harvested, are not allowed to be crumpled but must be pulled off by hands to take out the yellow young grains. The secret here is the skill of stirring them in the firing pans. Vong villagers are very clever at stirring because of the traditional experiments. They keep the flame small enough and they dont use normal kinds of fire woods but a special one. Besides, Pounding is also a very important step. They must be slightly pounded in a not-tooheavy rice mortar with rhythmical action so that the grains do not cool down. Stirring must start from down to up then up to down regularly. The grains that harvesred in time will be sticky and fragrant; too old,they will be hard; too young, they will be .... . Next, people screen the grains to remove the husk. But now they are not food yet. There is a next step is making-up. People grind the rice seeds then mix into water to make a green colouring, then stir into Cm. After that, thin pieces of Cm are put into banana or lotus leaves to have a good smell. Now, Cm can be sold and its sense is so pleasant. Cm mostly had with ripened banana( chui tiu trng quc ). In those days, if a man wants to please his girlfriends parents, he will give them Cm and persimmons. It is advisable to chew Cm slowly to feel the fragrance of young rice, the freshness of young leaves in the green of Cm, the purity of plant in the

sweetness of Cm. Moreover, the sense of lotus covering each piece of Cm reminds the warmth of the summer. In addition, many ethnics in Vietnam also have many other kinds of Cm as Cm nguoi Viet,..But each one has its different characteristics. Vietnamese people hold many Cm festivals : Thai ethnics kinkin khaukhau festival to wish for good climate, bumper crop, and this is where ones communicate, make friends,.. In general, Cm is consider as speciality in the North cuisine and popular all around the country.
