Read carefully through the instructions before the machines are started up and observe care with the use and maintenance of the machines. 1. Make sure that all guards are closed prior to starting. 2. Make sure that clothing worn is such that no loose parts can fasten in the machines. This is particularly important for arms and hands. Rings should not be worn when working with the machines. 3. Special care must be taken with tail cutting and deheading. 4. All personnel must receive instruction before using the machines that they are fiited with knives which can result in injury if care is not observed. 5. Repairs and adjustments to the machines shall only be carried out by authorised personnel. Safety equipment: (See drawing 4-10879) Filleting machine VMK 18 and VMK 181 are fitted with a safety system consisting of a safety module (A) and two safety switches (B). There is also a red stop plate (E) in front of the deheading knife. In order to start the machines the guards over the filleting unit must be closed. To facilitate the adjustment and cleaning of the machines they are equipped with a key switch (C) with a key (D). With the key (D) the machines can be run with the guard open. The key must only be handled by specially trained personnel. 2 rl Tivax crour ERY Feeding unit for VMK 18 VMK 181 Safety switches WINES an °31 95-02-24 P™ 4-10879 3/18 vex = 2 2 2:1 Feeding unit for VMK 18 & VMK 181 General description: (See drawing 4-10873) This feeding unit is used for deheading and tail cutting in the Filleting machines VMK 18 and VMK 181. The Filleting machine VMK 18 is obtained by means of connecting the feeding unit with Filleting unit VMK II on a common platform. When the feeding unit is connected in the same way with Filleting unit VMK 111 the Filleting machine VMK 181 is obtained. Filleting machines VMK 18 and VMK 181 are built up in the same way with the exception that the filleting units have different equipment since they process different types of fish. Both machine types are built up in the following way: The feeding unit (1) is connected with a filleting unit (2) on a common platform (3). The feeding unit (1) has a feeding table (4) on which there is a tail cutter (5). The operator takes the fish from the feeding table and allows the tail to pass the tail cutter. The operator then places the fish between the carriers in the feeding chain (6) which automatically transports the fish for deheading and feeding to the filleting unit. The waste from the feeding unit leaves the machine at two points. The heads are collected with the waste from respective filleting units. On Filleting machine VMK 18 this takes place in a chute, while Filleting machine VMK 181 is equipped with a waste conveyor. The tails leave the feeding unit in a separute chute for collection in a separate container. ERY: 2) @ Feeding unit for VMK 18 VMK 161 [= [P* 95-02-24 General description 4-10873 ve ERY 2:2 Technical specification: The feeding unit for Filleting machine VMK 18 and VMK 181 are manufactured from corrosion resistant materials - stainless steel, bronze and plastic. Fish: The feeding unit is developed for deheading and tail cutting of both fresh water fish such as trout, perch and pike-perch, and marine fish such as saithe, haddock, whiting and sea bass. Depending on the type of fish the feeding unit is vither combined with Filleting unit VMK 11 - for fish such as trout, or Filleting unit VMK 111 for fish such as perch, pike-perch, saithe, haddock, whiting as sea bass. The capacity can be varied in three stages: 30 fish per minute. 40 fish per minute. 50 fish per minute, The change in speed is easily made by moving a drive belt between three grooves in two pulleys. Filleting machine VMK 181 - 525 kg. vak ERY) 2:3 2:4 Transport: When Filleting machine VMK 18 and VMK 181 are transported packed in wooden boxes the feeding table is dismantled (4 as per drawing 4-10873) including the outfeed chute on the filleting unit. The mechines can also be transported on pallets. In that the machines are mounted on a platform they are easy to lift with a Jork-lift truck. The forks are placed under the platform. Great care must be observed to ensure that the machines do not slide off the forks. Installation: Installation of Filleting machine VMK 18 and VMK 181 is carried out in the following way: 1. Place the machine in position in such a way that it can be served from all directions. Take into consideration how the waste will come out of the machine and how packing etc. of the finished product: is to be arranged. 2. Adjust the platform’s foot screws so that the machine stands level; the attendant plastic feet are placed under these. 3. Fit the feeding table (4) and outfeed chute (7). Conneet a 1/2" water hose to the water connection on the machine (9). 5. Release the distribution box which during transport is turned upside down, and fit it in its operative position. 6. Connect the supply cable to the distribution box on the machine (10). Check that the machine is connected to the correct voltage. Connection should be carried out by an authorised electrician. 7. The machine should first be started for a short moment to check that the electrical connection has been made so that the machine goes in the right direction, 7418 ima, | 2:5 Procedures prior to start: In connection with the start up of Filleting machine VMK 18 and VMK 181 the following should be observed: 1. Check that the machine is lubricated. 2. Check that the guards are closed. 3. Open the water valve (9) to an appropriate water pressure. 4. Start the machine by pressing the green start button. 2:6 Work mode and adjustment of the machine: (See drawing 4-10873) The work mode of the machine is best described by following the path of the fish through the machine. 1. Tail cutting. The operator takes the fish from the feeding table and places the tail under the knife guard on the tail cutting unit. Certain fish may be filleted even if the tail has not been cut, but as a rule the results are better if the tail is cut. 2. Deheading. The fish without tail is placed between the carriers which move the fish towards the deheading knife. Note that the belly should lie in the direction of transport. The carriers are designed in such a way that the head is cut at an angle for maximum possible yield. See also item 2:9. "List of carriers". The length of the head which is to be cut is set by relea.ing the wheels (11) and moving the stop bar (12) according to the size of the fish by means of the index (13). Deheading takes place with a circular knife wl ich gives a fine cut. The deheading knife has a smooth side and a bevelled side. It is important that the bevelled side is turned towards the body of the fish to ensure an optimum cut. The machine is designed to cut fish with a maximum thickness of 60 mm, vex — Dy 3. Transfer to the filleting unit. After deheading the fish fall automatically down on a feeding chain with the belly facing down to the chain. During feeding into the filleting unit the fish are guided by the feeding plates (14). Depending on the type and size of fish these plates can be adjusted so that they form a narrower or wider chute. Adjustment is made by releasing the screws (15). The feeding unit for Filleting machine VMK 18 and VMK 181 is fitted with an electric motor which drives both the chain with carrier and the tail cutting and deheading knives. A, Lubrication should during normal operation be carried out once a week. B. The worm gear is filled with oil on delivery. It is a mineral oil which must not be mixed with synthetic oils. For installation on land the oil level should be checked once a year and replenished if necessary. When the machine is used on board a ship the oil should be changed twice a year. With this mineral oil the worm gear can be used with an ambient temperature between +-0°C to +30°C. Installation on board ship If the machine is installed on board ship it must be securely attached to the ship. Attachment can be implemented in various ways. To ensure a hygienic, safe and perfect function, the fish processing machines must be cleaned after each day's production. It is also preferable to rinse down the machines during short interruptions in production, such as during various breaks. When salt water is used for rinsing and cleaning the machines should finally be rinsed down with fresh water. To simplify cleaning all guards should be opened or removed, The electrical equipment is protected against moisture. High pressure rinsing of the electrical equipment should always be avoided, however. Regular inspection and checking. After production is finished for the day and the machines have been cleaned a general inspection should be made at regular intervals. This should include: 1. Checking that drive belts and chains are correctly te: sioned. 2. Checking that there are no unusual noises from the machine. Close all covers before the machine is started up. 2. Observe that the working dress has no loose parts which can get caught in the machine. This is of particular importance around arms and hands. Also the hair should be covered. Finger rings should not be worn when working with the machine. 3. Particular cautionsness must be taken at the head- and tailcutting operations, 4, All personnel has to be instructed before using the machine that it is equipped with knives which can cause physical injury in case of incautious handling. 5. Repair and adjustments shall be made by authorised personnel only. There is also a stop arm (E). If the machines are equipped with Automatic Feeder VMK 31, VMK 32 or VMK 33 there iy also a safety switch (F) on this machine. In order to start the machines al! covers must be shut. In order to facilitate adjustment and cleaning of the machines they are equipped with a key switch (C) with a key (D). N Filleting unit VMK 11 General description: (see drawing 4-10701) Filleting unit VMK 11 is included as a unit in most of VMK’s filleting machines for pelagic and farmed fish. Some form of feeding equipment is required for it to become a complete filleting machine. This may consist of an infeed table or different types of deheading/nobbing machines. Examples of these are the following: VMK 17 - Filleting unit VMK 11 (1) combined with infeed table (2) provided with tail cutter and for filleting of deheaded fish. The machine is operated by one person who feeds the fish into the filleting unit (1) manually. VMK 18 - Filleting unit VMK 11 (1) combined with deheader and tail cutter (3) for processing of farmed fish. Both units are delivered mounted on a common platform. The machine is operated by one person who after tail cutting places the fish between the carriers. These move the fish towards the deheading knife. The deheaded fish are transferred automatically to the filleting unit (1). VMK 12, VKM 13 & VMK 14 - Filleting unit VMK 11 (1) combined with Dekeading machine VMK 16 or Nobbing machine VMK 20 (4). These combinations have the denominations Filleting Machine VMK 12, VKM 13 or VMK 14. They can either by fed manually by 2 to 4 persons depending of the version, or with one person with Automatic Fecder VMK 31 or VMK 32. TIVOX srour VMK 17 VMK 12, 13, 14 ~~) ao 94-12-28 WES, Filleting unit VMK 11 If General description = 4-10701 2:2 ERY ix In filleting unit VMK 11 (1) the belly is opened and the innards are removed, after which either a butterfly fillet or two single fillets are cut, or a careful belly cleaning is made with brush and grindstone and the bones are left, so-called belly-cut cleaning. All products leave the machine via a chute (6). Alternatively the machine can be provided with an outfeeding conveyor VMK 66 (8) or Skinning machine VMK 42 or VMK 44. The waste leaves the machine by means of a waste chute. Technical specification: Filleting unit VMK 11 is manufactured of corrosion resistant materials - stainless steel, bronze and plastic. Fish: Products: Capacity: Power consump.: Water consump.: Filleting unit VMK 11 is developed for the processing of different types of pelagic fish such as herring, sardines, mackerel, horse mackerel and blue whiting, including farmed fish such as rainbow trout. The machine has considerable flexibility in terms of types and sizes of fish. Filleting unit VMK 11 can be equipped for production of butterfly fillets, single fillets and belly-cut cleaning, i.e. the bones are left in the fish but the belly is opened and carefully cleaned with brush and grindstone. The capacity of Filleting unit VMK 11 is completely determined by the capacity of the respective infeed part. 3 kW. Approx. 15 litres per minute, Water pressure min, 3 bar. Net weight: 400 kg 2:3 2:4 2:5 ERY ii Transport: (see drawing 4-10750) Filleting unit VMK 11 is transported packed in a wooden box or on a pallet {fully assembled. The machine can be lifted with a fork-lift truck. The forks are placed under the frame as per the drawing. Great care must be taken to ensure that the machine does not slide of the forks. Installation - water and electrical connection: 1. Place Filling unit VMK 11 in connection with the infeed part which is to be used. See drawing 4-10701. 2. Place the machine in position so that it can be served from all directions. Take into consideration how the waste comes out from the machine and how packing of the finished products is to be arranged. 3. Mounting of the filleting unit and deheading part takes place as per drawing 4-10775. The Filleting unit VMK 11 (1) is mounted together with Deheading machine VMK 16 or Nobbing machine VMK 20 (2) by placing the filleting unit foot (3) on the foot screw (4). The filleting unit is locked secure with the nut (5). 4. Adjust the machines foot screws so that the machine is level. The attendant plastic feet are placed under the foot screws. 5. Connect the filleting unit’s water system with the infeed part. 6. Connect electric cable as per instructions under 2:11 "Electrical equipment and wiring diagram". Check that the machine is connected to the correct voltage. Connection should be carried out by an authorised electrician. 7. The machine should be first started for a short moment to check that the electrical connection has been done so that the machine goes in the right direction. Preparations prior to start: Check that the machine is lubricated. Check that all covers are closed. Check that the water pressure from the water nozzles is sufficient. Filleting unit VMK 11 i 95-02-15 eal installation 4-10775 40/11 vk |= > y 2:6 2:7 Work mode of the machine: Feeding of fish to Filleting unit VMK 11 takes place in different ways depending on which type of machine is used. Feeding can take place manually (VMK 17), with a chain (VMK 18) or by means of different chutes (VMK 12, 13 and 14). The fish are transported through Filleting unit VMK 11 by means of two armed transport belts of plastic. In the filleting unit a belly strip is cut away, the innards are removed, and two knives cut up the tail section of the fish parallel to the backbone, after which the backbone and side bones are cut out. The finished fillets are fed out of the machine in a chute or by means of a fillet conveyor. The waste is collected together at a point under the machine. Additional equipment is available for he production of single fillets, and belly- cut (Kronsardin) etc. Adjustment of the machin The machine is on delivery given a basic setting and test run, The following instructions are intended to provide guidance for both the basic setting and fine adjustment of the machine. Fine adjustment normally requires to be made in site for the actual quality of fish to achieve best resulis. The following sizes are guide-lines and deviations may occasionally require to be made. Transfer from deheading machine. (See drawing 4-10757) When the Deheading machine VMK 16 or Nobbing machine VMK 20 are to be combined with Filleting unit VMK 11 they are both provided with a brush unit M 17. This has the task of moving the fish to the filleting unit via a transfer chute (1). Moving takes place in two stages. Brush (2) moves forward the deheaded and tail cut fish towards the stop plate (3). Brush (4) prevents the fish sliding back and brush (5) feeds down the fish in the transfer chute (1). Brush (2) is adjusted vertically so that even the smallest fish can be fed forward. The same applies to the other brush (5). Normally this implies that brush (2) is somewhat lower, i.e. comes closer to the fish pocket than brush (5). i id TIvOx orour 1-3696-2 3696-4 Wier Fileling machine VMK 2, 3,4 [™ 95-02-02 ALD Adjustments Pm 440757 vi ERY The transfer chute is available in two versions - one for small fish up to a size of approx. 4 fish per kilo (Art. No. 3696-2) and one for bigger fish (Art. No. 3694-4). The fish are turned in the transfer chute from horizontal to standing with the belly down. This turning is executed with guide plate (6). The guide plate is adjusted vertically with the set screw (7). Setting of filleting belts. (see drawing 4-10758) For Filleting unit VMK 11 there are two different widths of filleting belts - 16 and 21 mm. The machine is delivered normally with 21 mm wide filleting belts. The narrower belts - 16 mm wide - are used for small fish such as Baltic herring and sardines. It is important that the fish are gripped in the correct way by the belts. They should be placed so that the fish are gripped at the thickest part, i.e. on both side of the backbone. The belts can be adjusted both horizontally and vertically. Adjustment vertically takes place by moving the belts one or several groves on the pulley (1). It is important that both belts lie at the same level. Adjustment horizontally takes place by screwing the set screws (2). It is important that the filleting belts lie symmetrically in relation to the belly chute (3). The basic setting of the belts horizontally is indicated in the drawing and following table. The guide rollers vary depending on the width of the filleting belts and on their positioning in the machine. Depending on the thickness of the fish the guide rollers can be adjusted outwards or inwards, Adjustment takes place with the set screws (2). In order to ensure that the fish are exactly positioned in relation to the filleting knives the pair of rollers (3) can be fine adjusted sideways. This is done by releasing the nut (4) and then turning the eccentric serew (5). After adjusting the screw (5) is locked with the nut (4). Depending on the size of the fish the filleting belts should have different settings in the vertical plane, and it may therefore be necessary to also adjust the guide rollers (1) vertically. This is done by releasing the nut (6) and turning the shaft (7). The guide rollers (1) press the filleting belts against the fish with a spring (8). The pressure against the fish can be regulated by releasing the screw (9) and turning the spring holder (10). The springs (8) should always be lifted off from the spring holders (10) before the crossbar is lifted off. Adjustment of belly-cut. (see drawing 4-10753) Adjustment of the belly chute (1) fixes the size of the belly-cut. The belly chute is adjusted vertically by releasing the nuts (2). The point of the guide (3) should normally lie 2 mm after the intersection point of the knives. The knife (4) is fitted with the flat side upwards while the knife (5) has the bevelled side upwards, The washer (6) on the knife (4) is also larger than the washer (7) which holds the knife (5) secure. NOTE that the knife (4) and washer (6) are fitted with a left-hand thread (8) manufactured of brass. The knives (4 and 5) are mounted on two hubs (9). These are available in two different heights. Art. No. 56-2 - height 25 mm - for small fish up to approx. 4 fish per kilo, and Art. No. 56-3 - height 18 mm - for larger fish. The knives should be adjusted so that they form a tangent to each other without pressing too hard. This setting is adjusted by placing shims (10) between the shaft (11) and respective hub (9). Shims are available in the following 0.1, 0.2 and 0.3 mm. thickness WES. With thinner knives - 2 mm thick - the washer is not used. Setting of belly-cut with fixed knife (see drawing 4-10759) When belly-cutting of trout and rainbow trout a fixed knife is used. Adjustment of cleaning wheel. (see drawing 4-10754) The cleaning wheel (1) removes the innards when there is no vacuum unit on the infeed part. Roe and milt are always removed with the cleaning wheel. As ‘an extra accessory there is a special chute for roe and milt. This chute can also be used to separate the belly content from other waste if it ix necessary to reduce the discharge of fat and protein in the waste water. The chute can also be used during the processing of farmed fish, eg. in Filleting machine VMK 18 to separate the belly content, which often contains small stones, from other waste. In order to ensure efficient cleaning of she fish belly the top edge of the cleaning wheel should be level with the bottom edge of the filleting belts (see drawing 4-10754). The cleaning wheel is available in two different sizes, Art. No. 67 for small fish up to approx. 4 fish per kilo, and Art. No. 67-2 for larger fish. Adjustment of control over parting knives. (see drawing 4-10754) In order to achieve maximum yield the tail section of the fish is divided with two parallel knives (5). The guide (4) can be adjusted vertically with the set screw (3). The knives should cut up the tail to the backbone but never in the backbone. The thickness of the spacer washer depends on which type of fish is to be processed. There are the following standard thickness, 2, 3 and 4 mm: Art, No. 75-1=2 mm.Art. No. 75-7 = 3 mm.Art. No. 75-4 = 4 mm. Note that the parallel knives must lie in the centre of tte machine. This is corrected by placing spacer washers (7) between the knife hub (8) and the shaft (10): Art. No. 4578-1 = I mm. Art. No. 4578-2 = 2 mm. Adjustment of the filleting unit. (see drawing 4-10760 and 4-10761) The filleting unit consists of two rotating knives (1), a bottom guide (2), two sets with fingers (3) and a back guide (4). In addition there is a knife guard (5) which separates the fillet from the cut out backbone. The filleting knives should normally be mounted with the flat sides inwards and with the knife edges 0.2 - 0.5 mm from each other. It is of great importance that the filleting knives are centred in the middle of the machine, otherwise the fish will be cut at an angle. The fitleting knives can be shifted sideways by releasing the screws (6) and shifting the bearing housing (7). This adjustment must be carried out in relation to the grinding of the knives, The filleting knives are initially 200 mm in diameter and should be replaced when the diameter has diminished to 195 mm. Between the filleting knives there are two individually adjustable guide plates (2) which have the task of guiding the sides of the fish forward to the filleting knives. The distance A between the guide plates and filleting knives determines the thickness of the side bones which are cut away. The size A is adjusted by screwing the set screw (8) and varies depending of the size of the fish. It is normally 1 £0 1.5 mm. Each guide plate can also be individ wally set by releasing the screws (9). On the outside of each guide plate (2) there is a set of fingers (3). These hold the sides of the fish pressed against the guide plates (2) during filleting. Filleting unit. Setting of the size B as per the table below takes place by moving the entire finger package. The distance to the guide plates (2) is adjusted with the set screw (10). The spring loading of the fingers should be adjusted according to the hardness of the fish. Adjustment takes place by screw the nuts (11). The size C and D below refer to the basic setting of the finger package in the vertical plane. The set screw (12) is used to set the guide to its minimum position. The set screw (13) is used to limit how high the back guide (4) can be lifted by the fish. Both setting depend on the size of the fish. The knife guard (5) should lie as tight on the outside of the knives as possible. Check regularly that the surfaces on the knife guard are smooth and free from burrs to avoid damaging the surface of the fillets. NOTE that the inner part of the recess in the knife guard (5) should lie approx. 2 mm after the meeting point of the filleting knives. Different types of filleting knives are used for different types of fish. Filleting knife Art. No. 85-4 is used as standard, For mackerel and horse mackerel a double bevelled filleting knife is used - Art. No. 6845-2. For small delicate fish, Jilleting knife - Art, No. 85-2 - is normally used. In order to achieve optimum results during the filleting of different fish the Filleting unit VMK 11 can be delivered with different angles between the filleting knives. Changing the knife angle is done by changing the two attachments (14), the knife guard (5) and the two attachments (15). va ERY 2:8 2:9 2:10 The machine can be delivered with the following angles on the filleting knives: 30° - used for Baltic herring and sardines to max. B. Lubrication should normally be carried out once a week. C. The worm gear is filled with oil on delivery. This is a mineral oil which must not be mixed with synthetic oils, For land installation the oil level should be checked once a year and replenished when necessary. When the machine is used on board a ship the oil should be changed twice a year. This mineral oil enables the worm gear to be used with an ambient temperature between +- 0 C to +30 C. Two knives are more common since the dorsal fin is then removed at the same time, Filleting unit VMK 11 is prepared for fitting of the Single fillet device M 9. It is fitted as per drawing 4-10470. When fitting Single fillet device M 9 with two knives (1) the knives are fitied with the bevelled sides facing towards each other. A spacer washer (2) is placed between the knives. The spacer washer is available in thickness from 1 to 5 mm, depending on the type and size of fish. When changing from the production of butterfly fillets to single fillets the guide (A) which is screwed on the knife guard (B) should be changed to the single fillet guide (C). This takes place by releasing the screw (D). There is also a spring-tensioned back guide (E) and a spring-tension roller station (F) for the single fillet device. When changing to the production of butterfly fillets the back guide (E) and roller station (F) can be left on. 2. Belly-cut device M 24 (see drawing 4-10763) This device is normally used for herring, sardines, horse mackerel and blue whiting. It is not suitable for belly-cut gutting of mackerel, however, as a result of the shape of belly cavity and the consistency of the fish. For belly-cut gutting the belly is opened by the same equipment as for filleting; the contents of the belly are removed and the belly is cleaned by means of a brush and a grindstone. When mounting the belly-cut device the gutting wheel in the filleting unit is dismantled and replaced with a brush (1) and a guide (2). The brush (1) is available with different types of hard brushes for different types of fish. After this the two parallel dividing knives, both filleting knives, and the knife guard, are dismantled. The device with the grindstone (4) and fingers (5) is fitted in the same place as the single fillet device and in accordance with the drawing. The flushing pipe (3) is then fitted and connected to the water system. Was. The distance between the fingers (5) and the grindstone (4) can be adjusted by turning the eccentric pins (7). The pressure of the fingers to the sides of the fish can also be adjusted. This is done by turning the spring holders (8). When the fish passes the grindstone it is held down to the grindstone by the arm (6). The arm can be adjusted vertically with the set screw (9). The pressure of the arm to the fish is adjusted with the nut (10). In order to suit different types and sizes of fish there are brushes with different degrees of hardness and grindstones with different widths. 3. Roe and milt chute M_19 (see drawing 4-10702) The chute is used to make use of the roe and milt. It is also used to separate fat and protein rich belly waste from other waste and to separate waste with small stones when processing farmed fish. As indicated in the drawing it can also be mounted in both right-hand and left-hand versions. 4, Fillet conveyor VMK 66 (see drawing 4-10706) This unit collects the fillets inside the filleting machine, transports them with the retained orientation, and places them on a conveyor belt or work table. They can then be put down either with the skin upwards or downwards. The output feed height can be varied. 5. Dorsal fin cutter M55 This dorsal fin cutter is used to remove the dorsal fin oa horse mackerel. It is also used for the production of butterfly fillets and belly-cut gutted fish. 3. Installation on board ship. For installation on board ship the machines must be securely attached to the vessel. Attachment can be made in varous ways. To ensure hygienic, endurabel and interuption free functioning, the machine must be cleaned after each day’ s operation. It is also advantageous to rinse the machine in connection to shorter interruptions in operation for instance at breaks. In cases where seawater is used for rinsing and cleaning, the machine should be finnaly rinsed with fresh water. In order to facilitate cleaning all covers should be carefully opened. The electrical equipment is moisture protected. Strong waterspraying on the electrical units should be avoided though. During operation, cleaning of the filleting section shoul! not be done by a highpressure spray as there is a risk of pushing the belts into the knives. Grinding the knives. The filleting knives should be sharpened every day with an oilstone while remaining knives should be checked once a week and sharpened when they need it. All the knives should be taken out and sharpened in the grinding machine at regular intervals to maintain sharpness, correct edgeangles and roundness. When the knives are worn down appr. 5 mm. of the diameter they should be exchanged. A special Grinding Machine VMK 45 is available for sharpening the knives in the VMK machines. Regular inspections und check-ups. After finished processing and cleaning a general inspection of the machine should be done at a regular basis. Such inspections should among other things contain: 1. A check-up on the stretch of the chains and the drive- and conveyor belts. 2. A check of irregular sounds in the machine.
