AN INDIAN CULINARY QUARTET
CARVED IN HISTORY

TANDOORI ... is a cuisine believed to have originated from Persia


and found its way in various forms throughout Central Asia. A
tandoor or clay oven is heated up for several hours by a charcoal fire
built inside it. This method of cooking is very healthy as the natural
fat of the meat immediately sealed by the intense heat from the
charcoal fire. Tandoor cooking is a very healthy way of preparing
food.

DUM BRIYANI ... originated from Persia but holds a special


place in ancient India. Briyani which means succulent meat
simmered in its own juice along with fragrant basmati rice, is a
celebrated delight.

CURRY ...was created during the Mughal ruling and was


actually created in the name of the Great Mughal Sultanate. Curry is
made with Indian hot tasting Spices and Herb.

KEBAB ...was introduced to India by the invading armies of


Genghis Khan. Chefs from India turned it into a refined culinary art
that we have come to love and known as the Great Indian Kebabs.

Now, PAKEEZA proudly present this QUARTET.

North Indian Cuisine originated in places such as
Uttar Prades, Delhi and also Muhajir expats in Pakistan.
Mughlai cuisine has a history of over 500 years of delicious dishes.
When Babur who was once the Great Ruler of India, when he first
came to the country, he was fascinated with the local cuisine and the
large variety of spices available for the dishes.
Hitherto he was used to eating log-cooked chicken and meat,
specially the “raan”or hind leg of the ram. In India he began to
improvise dishes. His son Humayun did the same and Mughlai cuisine
started being prepared in the royal kitchen.
Flavour-wise, the Mughlai cuisine is a mixture of the rich and complex
flavours of Pakistan, Uzbekistan, and Punjab.
Akbar improvised further after his widespread conquests. More
varieties were available because of the addition of goat’s meat,
hardly available in countries like Persia and Afghanistan.
The preparation of Mughlai cuisine was likely time-consuming and
very involved with the number of flavoured sauces and butter-based
curries. It is like it was created to make people want more food
because it can be that indulgent!
