What is the 24 Hour Dietary Recall Record?

This is one type of tool for dietary assessment of an individual. For this method a Registered Dietitian or
a trained interviewer asks an individual to recall all foods consumed in the past 24 hours. The interviewer
should be non-judgmental while conducting the interview and try to prompt the patient for information on
brand names, portion sizes, recipe ingredients, cooking methods, condiments and beverages. Example of
questions: 1. What time did you get up yesterday? 2. What was the first thing you ate yesterday? How much?
3. When was the next time you ate? What did you eat? How much? 4. When did you eat next? What did you
eat? How much? 5. Did you eat or drink anything else between mealtimes? 6. Did you add any condiments –
butter, salad dressing, sugar? 7. Was this day’s intake different from usual? 8. Was this a weekday or a
weekend day?

BMI formula: = wt (kg)/ht2(m)
Pounds -> kg: Weight (pounds) divide by 2.2 = weight (kg)
Inches -> meters: height (inches) * 2.53 cm/inch = height (cm) divide by 100 cm/meter = height (meter)

How to fill out the 24-Hour Dietary Recall Record Form


The diet record form is designed to assist you in recording the foods that were eaten over a
given period of time. There is space to specify how much of each food has been eaten. Remember
to include all the information about each food so that the form can be of assistance to you when
educating the patient on diet and caries risk. Below is a list of tips for filling out the Form to make
it easier and more accurate.

HELPFUL TIPS ON FILLING OUT THE FORM:

A. DURATION:
• It is important to describe the following:
• The specific type of food you have eaten
• The time of day of the meal or snack was eaten
• The minutes you spent consuming the entire meal or snack.

B. DESCRIPTION: Was the milk skim, 1% fat, or whole milk?


(be specific) Was the food fried, broiled, baked?
Was the bread white or whole wheat or multi-grain?

C. PORTION SIZE: (IMPORTANT: "Accurate Portion Size" IS THE KEY TO


(be specific) CALCULATING CALORIES AND NUTRIENTS). Remember, if you
do not ask how much is eaten, you will not have any basis or
adequate information to determine calories or nutrients.
• This is the appropriate time to use “closed ended” questions – e.g.,
What size was the soda? Was it 2 or 3 packets of sugar?
• Indicate how much was eaten of each food using standard

• Use hand symbols if unable to assess how much was consumed
o One cup = 1 fist
o Half of a cup = cupped hand
o 3 oz = size of your palm
o 1 Tablespoon = thumb

D. CANNED FOODS: If you had a canned product, was it packed in water, its own juice, or
was syrup added to it?

E. CONDIMENTS: Ask if mayonnaise, mustard, catsup, steak sauce etc. was added to
