FLUFFY PANCAKES
Ingredient:
🔸1 cup all purpose flour
🔸2 eggs
🔸200ml milk (3/4 cup)
🔸1/2 cup buttermilk/mala
🔸1/4 cup cooking oil
🔸Orange juice from 1 whole orange
🔸2 tbsp sugar
🔸1 tsp baking powder
🔸1 tsp cinnamon powder
🔸Orange zest from 1 whole orange
🔸Pinch of salt
Procedure:
🔹Beat eggs, buttermilk, milk, orange juice, sugar, salt, cinnamon powder together until well incorporated.
🔹Fold in the flour until well mixed and you have a thick batter.
🔹Add in the baking powder, orange zest, cooking oil and fold in. You should have a thick, but runny batter.
🔹Scoop 1/4 cup of the batter and pour on a hot pan , let cook until you see air holes on the top side, or as it turns brown
then turn and cook the other side.

SCOTCH EGGS
🔸Beef sausages
🔸Eggs
🔸Bread crumbs
🔸Onions
🔸Dhania
🔸Wheat flour
🔸Cooking oil
🔸Garlic powder

OMELETTE
Ingredients:
🔸4 eggs
🔸2 tomatoes(seedless)
🔸1 capsicum
🔸1 grated carrot
🔸1big grated potato
🔸3tsp wheat flour paste(mix wheat flour with water to make a paste)
🔸Pinch of salt
Procedure
🔹Mix all the above ingredients thoroughly in a bowl.Then cook them as you do your pancake

POTATO CROQUETTES
Ingredients:
🔸4 cups of mashed potatoes
🔸Bread crumbs
🔸3tbs all purpose flour
🔸1egg beaten
🔸Spring onion chopped
🔸Black pepper
🔸Salt
🔸3tbs milk
🔸Oil to fly
Procedure:
🔹Add the spring onions, black pepper, flour, milk, salt to the mashed potatoes and mix well
🔹In two separate plates, put the beaten egg and a tbs of milk and in the other one put the bread crumbs
🔹Make either balls or sausage shapes from the mashed potatoes
🔹Deep in the egg then coat with the bread crumbs
🔹Deep fly till golden brown

CHICKEN CURRY
Ingredients:
🔸1/2kg boneless chicken breast cut into cubes
🔸5 blended tomatoes
🔸500mls curd milk/maziwa mala/coconut milk
🔸One onion
🔸3 cloves of garlic crushed
🔸Dhania chopped
🔸1 Tps paprika
🔸1 Tps chicken masala
🔸Cooking oil
🔸Salt
Procedure:
🔹In a pan put in your chicken cubes on low heat till they dry up
🔹Add in some oil and stir
🔹Add in your onions and stir till onions become soft
🔹Now add in your garlic,paprika powder and chicken masala and stir
🔹When they begin to brown,add in your blended tomatoes and salt stir and cover for six minutes
🔹Now add in your curd milk/mala and cover for 5 minutes
🔹Now garnish with coriander and serve

CHICKEN BIRYANI
Ingredient:
🔸1kg chicken
🔸500ml maziwa mala
🔸2 cubes tomato paste
🔸4 cloves garlic crushes
🔸1 tsp ginger crushes
🔸1/2 tsp cumin seeds
🔸1raw pawpaw((optional)
🔸1 tsp pilau masala/biryani masala
🔸5 tbsp cooking oil
🔸1/2 tsp black pepper
🔸Salt
🔸4 onions chopped in circular shape
Procedure:
🔹In a bowl,mix your chicken,salt to taste,mala,ginger,garlic and grate in the white part of your pawpaw
🔹Give a good mix and let it sit in a fridge for 1-2 hrs
🔹In a pan,heat the oil
🔹Put in the onions
🔹Fry the onions till they brown then set aside
🔹Now,take your chicken marinade
🔹Put in a sufuria, cook on a medium heat until the chicken softens,at this step,add in yout tomato paste and stir till
mixture changes color to red orange
🔹Now add in your biryani or pilau masala,black pepper and cumin seeds
🔹Give a good mix,now put maximum heat
🔹Stir well for five minutes
🔹Now add in the onions you had set aside
🔹Mix well
🔹Now take the oil you used to fry your onions,mix with the meat, stir for two minutes and your food is ready
For your rice;
🔹Heat oil in a pan,add in two bay leaves,two cinnamon sticks and stir
🔹Now add in your rice and salt
🔹Mix well
🔹Add two cups of water and stir
🔹Lower heat and cover
🔹When the rice is about to dry up,mix 1/2 tap golden yellow food color and 2tbsp of water
🔹Mix well and pour in the rice in a cross shape
🔹Put off fire after a minute and let the rice sit for five minutes
🔹Using a fork,mix the rice.Serve your food

PUMPKIN/BUTTERNUT CHAPATI
🔹Boil your pumpkin/butternut
🔹Blend the pumpkin/butternut or mash it if you dont have a blender. Then mix with the flour. You can also add salt
and little sugar if you like it sweet
🔹Knead the mixture till the dough is soft and bouncy
🔹Ensure you knead the dough till your basin is clean
🔹Cut your dough into small beautiful balls and set aside
🔹Roll each ball till its very thin, dont mind the shape here but let it be thin
🔹Pour little oil on top of the ball you rolled
🔹Smear the oil using your clean hands, ensure all parts is well smeared with the oil
🔹Sprinkle with some flour after oiling
🔹Then fold it into a rope shape
🔹Continue folding till you attain the shape of balls
🔹Roll each ball and heat it on a pan under low heat. Here dont oil
🔹Then panfry as you oil and enjoy your chapatis

MARINATED DEEP FRIED POTATO WEDGES


🔹Clean your wedged potatoes well, that's after peeling, cut into four pieces.
🔹 Blanch them for five minutes
🔹After the blanching process, put them into a kitchen towel to dry them off.
🔹 Transfer into a kitchen basin and sprinkle spices of your choice on them and mix very well. I used (ginger, cumin,
black pepper, coriander,Chibundiro all powder)
🔹Place your sufuria over medium heat and add oil then let it heat till smoking hot.
🔹Add your wedges and let it fry till golden.

SALAD
Just steam cabbage then add, tomatoes, dhania, carrots and vinegar. Mix well and serve with your potatoes.

Ingredients;
Red,green and yellow pepper
Carrots
Spring onions
Red onions
Garlic
Peas
Rice
Royco cube
Rice
Crush royco cube,mix it with water,soy sause and corn starch and shake
