ENTREP

Spicy PABuritto

Ingredients:
rice (garlic fried rice)
Tortilla Wrap/Fita Wrap
Spicy Pork Adobo (cooked)
1 lb. pork (diced)
1/4 cup light soy sauce
3 tablespoons oyster sauce
3 tablespoons white vinegar
1 1/2 teaspoons whole peppercorn
3 pieces dried bay leaves
2 teaspoons granulated white sugar
6 pieces red chili
5 cloves garlic (crushed)
cooking Oil
salt to taste

Step 1:
Shred the pork adobo slices along the grain.
Step 2:
Mix the flaked pork with its sauce to absorb flavor. Let it sit for 10 minutes.
Step 3:
Heat a frying pan and pour-in the cooking oil.
Step 4:
When the oil becomes hot, fry the shredded pork in medium heat until the texture
becomes slightly crisp.
Step 5:
Turn-off heat then transfer the fried pork in a plate lined with paper towel. This
will absorb the oil.
Step 6:
Set up your mise in place: your spicy pork adobo flakes and garlic fried rice while
heating the tortilla wrap in a pan.
Step 7:
Tear off a sheet of aluminum foil just larger than the tortilla wrap you are about
to lay on top of it. Next, cover the midsection of your tortilla with a layer of
spicy pork adobo flakes you cooked then spoon on some rice. That’s the fill.
Step 8:
Next, fold the wrap. Pretend you are facing north. Fold over the east and west
sides to cover the ingredients by about a third of the way from each end.
Step 9:
Now pull the south side (closest to you) over the ingredients, allowing a margin at
the far end. Pull toward you as you roll northward. Seal by pushing everything on
top of that last bare margin of tortilla.
Step 10:
To finish, wrap the burrito in the foil in exactly the same way you folded the
tortilla.
