Wonderful Dishes
A Cou-cou
Barbados is a Caribbean island known as the 'Land of the Flying Fish', so it's no surprise that flying fish are the
main ingredient in the country's national dish. Cou-cou and flying fish is very popular all over the tropical island.
Cou-cou is made from cornmeal (maize flour) and okra (a Caribbean plant). These two ingredients are mixed with
water and spices in a large pot, and stirred regularly with a big stick while they cook. When cooked, the cou-cou
becomes thick and sticky. The flying fish is fried with lime juice, spices and vegetables and put on top of the cou-
cou. Traditionally served on Fridays or Saturdays, this dish should be eaten hot from a deep bowl or a dried
calabash shell – a calabash is a large ball-shaped fruit, similar to a squash.

B Fish and Chips


One of Britain's best-known meals is fish and chips. It's not only delicious, but also part of British culture. The fish is
covered in batter (made from eggs, milk and flour), then fried in hot oil. When cooked, the batter is crispy and the
piece of fresh fish inside is soft. This is served with chips, pieces of deep fried potato, which are then sprinkled with

salt and vinegar. Fish and chips has been around since the 19 century. It was traditional in parts of Britain to eat
fish and chips on Friday evening. Families would usually buy it from their nearest shop and serve them at home. It
used to be quite a cheap meal and was often served wrapped in newspaper.

C Bigos
Bigos, or 'Hunter's Stew' is popular across Europe and is the national dish of Poland. Chopped meat of all kinds
including beef, lamb, chicken and game is slowly cooked with sauerkraut (pickled cabbage), fresh white cabbage
and lots of salt, pepper and spices. Every family makes their Bigos to suit their own tastes – extra sauerkraut gives
a more sour flavour, or to slightly sweeten the dish, honey, raisins and sugar can be used. Originally bigos was
stewed in giant cauldrons over open fires and often eaten at outdoor events like hunts, markets and festivals. The
stew gets better and tastier each time it's reheated, and is usually served in a large bowl with rye bread – or even in
a bowl made of bread!
