Ganache Filling Recipe

Ingredients
500g Cream

25g Glucose

25g Inverted sugar

650g Dark chocolate

100g Butter

Method
● Chop up your chocolate and place it in a heatproof bowl.
● In a small saucepan, bring your cream mixture to a simmer over medium heat.
● Pour the hot cream over the chocolate and let it sit for 1-2 minutes to allow the chocolate to
melt.
● Using a spatula or whisk, stir until the chocolate is fully melted and the ganache is smooth
and glossy. Then, blend it with an immersion blender to really ensure a good emulsion
● Allow the ganache to cool and thicken before using it as a filling or frosting for your
chocolates or pastries.
