 Preference of locals
 Types of tourists in your city
 Unique selling point of your restaurant

1) Skin on salmon filet. I like that being from Vancouver, this fish is indigenous to the area
and would thus be expected from locals or tourists. It is readily available and fresh year
round.
2) French onion soup. I love this as an appetizer in a restaurant because it has universal
appeal. It is light enough to be an appetizer or can be paired with another appetizer to
become a full meal. It is comforting to both locals and tourists.
3) Table side Caesar salad. A Caesar salad is a basic and universal restaurant option,
however being prepared and served tableside gives the guests the option to customize it
(no anchovies, extra garlic) and make it feel more high end with little to no additional
cost.
4) Cheese bread. Similar to my favourite restaurant (Hy’s) this classic satisfies everyone
from children to grown adults. It is easy to prepare, can get to the table quickly, and if it
is as good as Hy’s patrons will return simply for that and a cocktail.
5) Truffle macaroni and cheese. Because I feel that ala carte sides are preferable, I like this
dish because it appeals to everyone. It is simple and delicious. Low food cost. A great
accompaniment for a family like mine which has a toddler so we can all enjoy something
rather than ordering from the children’s menu specifically.
