Country Profiles

The Bahamas - The dishes and beverages of The Bahamas are known as Bahamian
cuisine. It comprises tropical fruits, rice, peas, pigeon peas, and pork, as well as seafood
such as fish, shrimp, lobster, crab, and conch. Chilies (hot pepper), lime, tomatoes,
onions, garlic, allspice, cinnamon, rum, and coconut are all common spices in recipes. On
the islands, rum-based drinks are very popular. Because the Bahamas is made up of so
many islands, there are significant gastronomic differences.

Cuba - Cuban food is a fusion of African, Spanish, and Caribbean flavors. Some Cuban
recipes use spices and techniques that are similar to those used in Spanish, African, and Taino
cooking, with a Caribbean flavor and spice influence. As a result, a mash-up of various cultural
elements emerges.

Haiti - Haitian food is based on Haitian cooking traditions and practices. It is a Creole cuisine
that evolved from a fusion of numerous culinary types that occupied the western portion of
Hispaniola's island, including African, French, indigenous Tano, Spanish, and Arab influences.

Jamaica - Jamaican food is a fusion of cooking techniques, flavors, and spices influenced by
the island's diverse population of Amerindians, Africans, Irish, English, French, Portuguese,
Spanish, Indians, Chinese, and Middle Easterners. Curry goat, fried dumplings, and ackee and
saltfish are all popular Jamaican meals.

Puerto Rico - Puerto Rican food consist of rice and coconut arepas, toasted cornmeal
arepas, yuca bread with garlic and coconut or cheese, mofongo, and guanine are just a few of the
popular Loza meals.

The Dominican Republic - Dominican cuisine includes meat or fish, grains such as rice,
corn (local to the island), and wheat, vegetables such as beans and other legumes, potatoes, yuca,
or plantains, and salad, dairy products such as milk and cheese, and fruits.

Barbados - Barbados' national food consists of cou-cou with fried flying fish in spicy gravy.
Pudding and souse, a dish of pickled pork with spicy sweet potatoes, is another typical delicacy.
There's also a large range of fish and meats to choose from.

Trinidad and Tobago - Trinidad and Tobago food consist of Roti (most commonly dal
puri and paratha, but also puri, sada roti, Dosti roti, or aloo puri), dal bhat or kharhi, and rice are
served with condiments such as achar, kuchela, mother-in-law (pickled vegetables), pepper
sauce, and dishes such as amchar (curried mango), bhaji (dasheen bush or any spinach), and
amchar (curried mango).
Antigua and Barbuda - Antigua and Barbuda food consist of fresh seafood, top-notch
rum, and flavorful dishes. Although Caribbean islands have similar dishes, they all differ and
have their own unique spin on food. The food is also strongly influenced by West African foods
because of the slave trade.

Saint Kitts and Nevis - The country's most well-known dish, goat water stew, combines
goat, breadfruit, green pawpaw (papaya), and dumplings (also known as "droppers") in a tomato-
based stew
