Instructions:

1. Prepare the Pears:

• Peel the pears, leaving the stems intact if desired for presentation.
• Slice a small piece off the bottom of each pear so that they can stand upright.
2. Poaching Liquid:

• In a large saucepan or pot, combine the red wine, sugar, cinnamon stick, and any
optional flavorings such as vanilla bean or citrus zest.
• Place the saucepan over medium heat and stir until the sugar is dissolved.
3. Poaching Process:

• Once the sugar is dissolved, add the prepared pears to the poaching liquid.
• Bring the liquid to a gentle simmer, then reduce the heat to low. Cover the saucepan
partially with a lid.
• Allow the pears to simmer in the liquid for 25-35 minutes, or until they are tender but
still hold their shape. You can test the doneness by inserting a knife into the thickest part
of the pear; it should slide in easily.
• Occasionally rotate the pears in the liquid to ensure even poaching.
4. Cooling and Serving:

• Once the pears are cooked, remove them from the poaching liquid using a slotted spoon
and transfer them to a plate or serving dish.
• If desired, strain the poaching liquid to remove any spices or solids, then return the
liquid to the saucepan.
• Increase the heat to medium-high and simmer the poaching liquid until it reduces and
thickens slightly, creating a syrupy consistency.
• Pour the reduced poaching liquid over the pears.
• Serve the pears warm or at room temperature, optionally accompanied by whipped
cream or vanilla ice cream.
