In serving the food, the server must position


himself/herself on the left side of the guest
and clear the soiled dishes on the right side.

Beverages are served from the right. In


contrary, plated food items are served from
the right due to the widespread use of plated
service.

The server must ensure that spillage must

1.A sauce boat must be used in serving sauce


with a sauce ladle. It must be placed on an
underplate.

2.Run the sauce ladle over the edge of the


sauce boat to avoid the table cover from
being soiled.

1) French Service

French service is the most elegant and the


most expensive type of service.

It is commonly used in fancy restaurants,


hotels, cruise ships, and casinos.

3) English service

It is the least expensive and the least


complex sort of service which is otherwise
called as the Family Style service.

4) American service

This type of service is usually called as “plate


service” and is less formal compare to the
other services.

The food is individually plated before
