Broccoli Stem, Quinoa and Vegetable Stir-Fry

Ingredients:
1 stalk of broccoli
1/2 big onion
2 cloves of garlic
Mushrooms or any vegetable of choice
Cherry tomatoes
1/2 cup cooked chickpeas
1/2 cup quinoa or rice
1/2 teaspoon turmeric
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon ginger
Salt and pepper

Preparation:
This is a recipe with broccoli that you probably didn't know about. For it, we
will use the broccoli stem, which is just as edible as its 'little trees'. First grate
the stem and finely chop the onion. When you're done, heat a frying pan with
a little oil, add the big onion and let it cook for two minutes, then add the
cumin, turmeric, ginger and paprika.
Add half a teaspoon of salt, finely chopped garlic and pepper to taste. Mix the
ingredients and let cook for two more minutes. Add the mushrooms or any
vegetable of choice and let them brown a little. Add the cooked chickpeas and
the quinoa or rice, also already cooked. Then add the grated broccoli stem and
let it cook for about 4 more minutes. When it comes to plating, you can add a
few pieces of Cherry tomatoes.
