UHT We choose indirect heating of milk in the tubular heat exchangers. Direct heating with steam dilutes the milk (due to condensation of the steam), water need to remove later but flow rate is higher. Indirect heating is at slower rate, but no need to remove water (example: tubular heat exchanger). Tubular heat exchanger as this can be used for higher temperatures, pressure and flow rates.
