Gouda Cheese

About Chesse
Gouda is a Dutch cheese from the
town of Gouda in the Southern
Netherlands.
Interestingly, the taste, texture,
and flavor of Gouda can vary a
lot.
Due to the extensive differences in
aging time (anywhere from 1
month to 36 months), two
different types of Gouda can taste
entirely different.
Younger cheeses are mild in
flavor with a smooth, semi-hard
texture; older Gouda is hard and
crumbly, with a deeper flavor.
Phases of fabrication:Gauda Cheese
1.Pasteurising the milk: This
kills pathogenic bacteria. The milk is
heated to 72 °C, followed by quickly
cooling.
2.Forming the curd:Bacterial culture is
added to the milk in the vat at 29 °C to
acidify the milk. Rennet is added to the
milk when it reaches a certain pH.
3.Cutting the curd:Workers cut the curd
into slabs and then the slabs are pushed
into a mill which chops them into little
pieces.
4.Pressing the curd:The curd is salted and
put into steel mold for 36 hours.
5.Ripening or Aging: The cheese is then
aged for a certain amount of time .

When the cheese has
reached the required
maturity, it
is vacuum packed and
placed in cool storage at
4 °C. This slows down
the ripening process so
the cheese retains its
characteristic flavour
and also prevents
contamination.

Light-bodied red wines
traditionally accompany
soft, milder-flavored
cheeses. Cabernet
Sauvignon and Pinot Noir
are perfect combinated
with Gouda.

Gouda Cheese
Gouda is a hard, sweet
cheese that pairs well
with a variety of foods
and drinks. It can be
eaten with fruit and
bread on a cheese
platter, or enjoyed
with a glass of red
wine. Gouda is also
great in sandwiches,
vegetable dishes, and
other cooked recipes.
