A character who represents the diversity of Peru is

Manuel Choqque: considered the creator of diversity.
This individual belongs to the fourth generation of
farmers in his family, he studied engineering and at
the same time combined all traditional knowledge, in
this way he has been able to create 350 varieties of
native potato in Cusco, Peru.
He was awarded the Summum gastronomic award in
the category of best producer in 2018. Today he is
considered the guardian of diversity for his hard work
in a gastronomic research center.
