VITAMINS
• A vit amin i s an organ ic molecul e (or a set of molecul es
cl osel y rel ated chemi cal ly, i .e. vitamers) that is an
ess enti al mi cronutri ent whi ch an organi sm needs i n smal l
quanti ti es for the proper functi oning of its metaboli sm.
Ess enti al nutri en ts cannot be synthesi zed in the organi sm,
ei ther at al l or not in suffi ci ent quantiti es, and therefore
must be obtained through the diet. Vi tami n C can be
synthesi zed by s ome speci es but not by others; i t i s not a
vi tami n in the fi rs t i nstance but i s i n the second.
. The term vi t am in does not i ncl ude the three other groups
of essenti al nutrients: min eral s, es senti al fatty aci ds, and
ess ential ami no acids. Most vitamins are not si ngle
molecul es , but groups of rel ated mol ecul es call ed vi tamers.
For exampl e, there are ei ght vi tamers of vi tami n E: four
tocopherols and four tocotri enol s. Some sources l i st fourteen
vi tami ns, by i ncludi ng chol ine, but major heal th
organ izati ons li s t thirteen: vi tami n A (as all - trans -reti nol,
al l -t rans-retinyl -esters, as wel l as al l- t rans-beta-carotene
and other provitamin A carotenoids), vi tamin B 1 (thi ami ne),
vi tami n B 2 (ri boflavi n), vi tamin B 3 (ni aci n), vi tami n B 5 (
pantothen ic acid), vitamin B 6 (pyri doxine), vi tamin B 7 (bi otin
), vitamin B 9 (fol ic acid or folate), vitamin B 1 2 (cobal ami ns),
vi tami n C ( ascorbic aci d), vi tami n D (cal ci ferol s), vitami n E (
tocopherols and tocotrienols), and vitami n K (phyll oqui none
and menaqui nones)
•Vitamins have diverse biochemical functions. Vitamin
A acts as a regulator of cell and tissue growth and
differentiation. Vitamin D provides a hormone-like
function, regulating mineral metabolism for bones and
other organs. The B complex vitamins function
as enzyme cofactors (coenzymes) or the precursors for
them. Vitamins C and E function as antioxidants. Both
deficient and excess intake of a vitamin can potentially
cause clinically significant illness, although excess intake of
water-soluble vitamins is less likely to do so
