MY FAVORITE

RECIPE
PATACON SOUP
INGREDIENTS
8 CUPS OF BEEF BROTH
1 TABLESPOON OF OIL
1 CUP OF CHOPPED ONION
3 GARLIC CLOVES, FINELY MINCED
½ CUP DICED RED BELL PEPPER
SALT AND PEPPER TO TASTE
HALF A TEASPOON OF GROUND CUMIN
A QUARTER TEASPOON OF ACHIOTE
12 COOKED PATACONES
FRESH CILANTRO TO GARNISH.
INSTRUCTIONS
HEAT THE OIL OVER MEDIUM HEAT IN A LARGE POT, ADD
THE ONION, GARLIC, SPRING ONION, PAPRIKA, CUMIN AND
ACHIOTE. COOK FOR 5 MINUTES, STIRRING FREQUENTLY.
ADD THE BEEF BROTH TO THE POT AND BRING TO A
BOIL. REDUCE HEAT TO MEDIUM AND COOK FOR 20
MINUTES.
Sprinkle cilantro on top and serve hot.

ADD THE PATACONES AND COOK OVER LOW HEAT FOR


ABOUT 10-15 MINUTES, BE VERY CAREFUL WHEN STIRRING
THE SOUP, TO AVOID BREAKING THE PATACONES.
SPRINKLE CILANTRO ON TOP AND
SERVE HOT.
