Banitsa
This tasty dish is a traditional Bulgarian pastry
made by layering a combination of beaten eggs
and bits of cheese amongst filo pastry.  It is then
baked in the oven until it is cooked on the inside
and crispy on the outside. Warning: If you’re on
a diet, be prepared for your calorie count to go
out the door! Banitsa is highly addictive and
extremely delicious.

Tarator
Tarator, a scrummy cold soup is among the
Bulgarians favourite foods, especially for the
summer months. It is generally served as a first
course however, it can also be served as a side
dish to a main meal. It is commonly made with
fresh cucumbers, walnuts, garlic, Bulgarian
yoghurt, dill, herbs and vinegar or lemon. It is
super refreshing and very tasty.

Shopska Salata
Shopska salata or shopska salad is a traditional
Bulgarian salad made with chopped
cucumbers, tomatoes, onions, peppers, fresh
parsley and grated white cheese. What makes
this different you ask? Bulgarian white cheese
or ‘sirene’ is grated on top of the veggies,
giving the salad its inimitable flavour and is
what makes the salad taste so good!

The filling can be sweet: from cottage
cheese, cherries, blueberries, grated apples
- sour cream is served with such
dumplings.

Borsch is a traditional Ukrainian dish made


with meat broth, potatoes, cabbage, carrots,
onions, parsley, dill and of course beets,
thanks to which the borsch becomes dark
red.

nuts, which is prepared for Christmas.

The Umayyad also known as the Great


Mosque of Damascus, located in the old
city of Damascus, is one of the largest and
oldest mosques in the world. The mosque
is also important in Islam because of its
historical and eschatological reports and
events associated with the mosque. The
mosque is the fourth holiest site of Islam.

Our Lady of Saidnaya Patriarchal
Monastery is a monastery of the 
Greek Orthodox Church of Antioch located in 
Saidnaya, Syria. It is one of the most ancient
monasteries in the world and in the region of the
Middle East and North Africa, traditionally held
to have been founded by Byzantine emperor 
Justinian I in 547 AD. It is run by a religious order
of nuns. It is an important pilgrimage site for
Christians and Muslims, who visit an icon of 
Saint Mary which is attributed to Saint Luke.

Rigag
One of the most well-known breads in the United Arab
Emirates and wider Gulf region is the wafer-thin Rigag
bread. Cooked on a special pan over high heat, this bread
is often prepared for breakfast and often is incorporated
into foods served during the Holy Month of Ramadan.

Usually, toppings such as cheese, eggs, honey and


mhyawa (a thick fish paste) are added while the bread
cooks. The finished dish, which looks similar to a crepe,
is eaten hot. 

The dough is made using only three ingredients: whole-


wheat flour that is sometimes mixed with No. 1 and No. 2
flour, water and salt. It does not contain other common
bread ingredients such as ghee, milk or yeast. Cooked on
a wide flat cooking surface or large pan over a high heat,
the soft dough is spread thinly and then cooked until
crisp.

Machboos is a cross between biryani and


risotto, where the rice is cooked in the
spiced broth of the meat or chicken,
melding the spices and ingredients.

Luqaimat recipe or a kind of arabic sweet


dumpling is a very famous dish that the
Emaratis enjoy during Ramadan or other
times. Pretty easy to make, this dessert
takes minimal ingredients, yet tastes
absolute awesome.
