PROTEINS
Is a polymer of amino acid monomers. Our body has tens of thousands of different
kinds of proteins, each with a unique dimensional shape corresponding to a
specific function.
MONOMERS: AMINO
ACIDS STRUCTURE
All Proteins are made by stringing together a common set of 20 kinds of amino
acids. Every amino acid consists of a central carbon atom bonded to four covalent
partners.
TYPES OF PROTEINS
PROTEIN SHAPE
The bond that joins amino acids is called a peptide bond and the resulting long chain of amino
acids is called a polypeptide; The difference between the peptide bond and the polypeptide is
like the relationship between a long thread and a sweater, for example to be functional the long
thread must be precisely knit into a specific shape (the sweater).

Changing an amino
acid may alter the
shape of the protein,
which changes its
function.
EXAMPLES
Proteins examples:

● hemoglobin
● collagen
● keratin
● gliadin

Examples at food:
● Meats – beef, lamb, chicken and fish.
● Dairy products – milk, yoghurt (especially Greek
yoghurt), cheese (especially cottage cheese)
