Determination of bulk volume of

powder milk

Concentrated and Dried Milk products
Definition:
The bulk volume of the powder is the volume of powder divided by weight, expressed in mL/100g
Apparatus:1: balance: sensitivity 0.1mg 2:200ml measuring glass clinder 3:stampt – volumeter
4: Brush
Principle:
100g of sample is filled in a glass cylinder and tapped in stampf-volumeter. The results of bulk
density are expressed as loose, tapped 100 times or tapped 1250 times.
Procedure:
• Weigh 100g of powder and transfer it to measuring cylinder. Avoid shaking or tapping of cylinder.
• Level off the surface of powder with the help of spatula.
• Record the volume (v1), indicated as “loose powder bulk volumes.
• Tap the cylinder 100 times in stampf-volumeter.
• Record volume (v2). Indicated as “tapped powder bulk volumes.
• Continue tapping the cylinder for 1250 times. The volume (v3) is
indicated as tapped to the extreme bulk volume.
Results:
Bulk volume= volume/weight (mL/100g)
Determination of scorched particles in milk powder

Definition:
These occur as unsightly, discolored specks in milk powders. They are
often the result of powder deposits in the spray‐drying system. With a
low water activity and exposure to hot air, the milk powder deposits
darken through the Maillard reaction and they can be perceived as
sediment or dirt particles. 
Principle:
The amount of scorched particle in milk powder is estimated by
comparison with ADMI chart; “scorched particle standard for dry milk”.
Apparatus:
• ADMI chart Reagent: Defoaming agent-octylalcohol or diglycol
laurate 5
• Weighing balance
• Mixer
• Vacuum filter
• Scorched particle tester
Procedure:
• Weigh correct amount of water
Non-fat milk 25g whey 15g
Whole milk 32.5g
• Pour the powder in blender glass and 250mL water at 18-27oC.
• Add 2-3 drops of defoaming agent.
• Mix for 60 seconds in the mixer.
• The sample is filtered through filter paper.
• Rinse the blender with 50mL distilled water and again filtered with same
filter paper.
• Finally, the filter paper is dried at 35oC for 2 hours and compared with
standard disc of scorched particles.
Results:
The standard chart is divided into a scale from A-D
A= 7.5mg B= 15mg
C= 22.5mg D= 32.5mg
If sample result comes between two standards, highest value is set.
