Where did the cau cau originate?

The peculiar name of the


dish has several theories. It
is said that it could come
from any of the Quechua
words: can or acacau, which
mean trifle and hot,
respectively 
They used the phoneme "caucau" to express
that something should be cut into small
pieces. The Peruvian chef and researcher,
Gastón Acurio, affirms that African slaves
are the creators of this dish.

WHAT DOES CAU CAU MEAN?

The cau cau is made with a mixture of cooked tripe1 2 3 or chicken4 and white potatoes
(preferably canchán or yungay). The main ingredients are cut into cubes, which are cooked in
a yellow pepper base,

750 grams of tripe (beef belly) cut into squares
1 kilo of white potato cut into squares
1 large carrot

150 grams of peas

1 tablespoon of yellow pepper

1/2 onion chopped into small squares

1 teaspoon turmeric or 1/2 teaspoon toothpick

1 bunch of mint

1/2 teaspoon of cumin

1/2 teaspoon black pepper


PREPARATION OF CAU

• Cook the tripe with water that covers it and the mint branches until it is soft. Dice it.
• In addition, heat the oil with the fry the garlic, onion, ground yellow pepper and
toothpick. When it is well cooked, add the tripe, the potatoes and a little of the liquid in
which the tripe was cooked.
• Bring to a boil and sprinkle with the minced peppermint. If desired, sprinkle with lemon
juice. Serve with grained rice
PREPARATION

We remove the mondondo from the water and let it cool down.
We wash the pot and heat it and add a little vegetable oil to it.
For the dressing we add the chopped onion and leave it for two
minutes but stirring it and add garlic paste and the chili paste about 6
tablespoons.
 We cut the tripe into medium squares and put it in the dressing along
with chopped potatoes and a pinch of salt.
Cut the carrot and add to the dressing along with the peas.
Then cook over medium heat for 10 to 15 minutes.
For the rice:
 Put a little oil in a saucepan
 Put garlic paste in the saucepan
 Add the water for the rice
 Add salt and rice
