Garlic and Cheddar Soup

Soup flavored with garlic and cheddar cheese and served garnished with fresh oregano.

Ingredients Garlic cloves Grated cheddar cheese Butter Refined flour Milk Brown sugar Malt vinegar Vegetable stock Fresh oregano leaves chopped Method of preparation
First crush the garlic then melt 60 grams butter in a non-stick pan, then add the refined flour and saut. Add milk slowly and cook stirring it continuously. Melt the remaining butter in another non-stick pan, add garlic and saut till it becomes light brown. Add brown sugar and mix well. Add vinegar and mix well as well. Add cheddar cheese to the first pan and whisk well. Add vegetable stock and mix. Add the crushed garlic to the soup and mix well. Transfer into a serving bowl. Garnish with oregano leaves and serve hot.
